Sharing my ridiculously good chicken cobb salad that we have been making on repeat over here. Filled with a ton of flavor and super satisfying, filling and healthy.

I am the first to admit, that I don’t eat or make many salads. Back in the day (pre-pandemic) I would usually order salads at one of those fast casual type places and get it to go. But when it comes to making salads at home – I get kind of lazy.

You can thank our family trip out to the hamptons for this salad’s inspiration. Filled with tons of fresh veggies and access to all of the good stuff to cook up when we have been out here.

I first made this salad randomly just to use up all of the leftovers from making dinner for a few nights. Afterwards Jordan told me that it was the best salad he has ever eaten, which was a flipping awesome compliment coming from the king.

I couldn’t not share this healthier cobb salad recipe. Plus I know you guys are going to love it as much as we do. Feel free to get creative and use whatever you have on hand. The keys having lots and lots of mix-in’s so it isn’t boring with just some leafy greens, ya know?!

This type of salad is the best to enjoy during the day when it is super hot outside and you want something refreshing and healthy and satisfying. It is also great for a lighter dinner too, and you can use up all of the leftovers from whatever you have whipped up. I used all grilled meats and veggies here!

I know the traditional cobb salad has hard-boiled eggs too. But I was lazy and didn’t add – ha! Definitely will next time 🙂

How to make the easiest chicken cobb salad

  1. Whip out a large mixing bowl and cutting board
  2. Beginning chopping the greens and all of the toppings into smaller pieces (totally personal preference on size)
  3. Add to the large bowl and drizzle desired amount of dressing and squeeze the fresh lemon juice on top
  4. Mix well with tongs or a spoon and serve immediately!

Ingredients

Scale
  • 5 cups leafy greens (I did mix of arugula + mixed greens)
  • 2 large chicken breasts, cooked and sliced (I grilled these and marinated them in some lime, salt + pepper and avocado oil)
  • 6 pieces of bacon, cooked
  • 1 avocado
  • 1 large cucumber
  • 1/2 cup cooked corn (I sliced off leftovers from our corn on the cob)
  • 1/2 cup feta cheese
  • 2/3 cup grilled veggies (anything you have!)
  • 1 lemon
  • Dressing of choice (we used this one!)

Instructions

*If making in advanced, add dressing on right before serving so it doesn’t get too soggy
