These Broccoli Cheddar Noodle Cups are one of our favorite healthier recipes to make! They are made with only 4 ingredients and super easy to whip up.
These are hands down my new favorite savory recipe to make for the whole family!! We made these with leftover noodles from our mushroom noodle pie and it was completely random and on whim. Yet these turned out *so* flipping good. Sometimes I feel like the best recipes are done on a whim like this.
These noodle cups are almost like mini casseroles and they are the easiest way to sneak from veggies into your diet or your kid’s or anyones. They come together with just 4 ingredients (yes – they are that easy) and they only take 25 minutes to make. You can pair them with your favorite protein, eat them on your own as a snack, or however you’d like. Oh and I love that these are freezer-friendly. So if you make a batch and want to keep them on hand to eat whenever you want – go for it!

What ingredients are in these heathy noodle cups:
- Noodles of choice, cooked (I used these egg noodles)
- Eggs, whisked
- Cooked broccoli, chopped
- Shredded cheese of choice
- Sea salt and black pepper to taste
How to make broccoli cheddar noodle cups:
- Preheat oven to 400 degrees and grease a muffin tray well
- Mix together noodles, veggies, cheese, spices and eggs
- Toss mixture with tongs and then fill about 8-9 muffin holes with noodles and press down firmly
- Bake in oven for 22-25 minutes or until top is golden
- Allow the noodle cups to cool for a few then gently remove and enjoy!

Ingredients
- 4 cups noodles of choice, cooked (I used these egg noodles)
- 3 eggs, whisked
- 1 cup cooked broccoli, chopped
- 1/2 cup shredded cheese of choice
- Sea salt and black pepper to taste
Instructions
- Preheat oven to 400 degrees and grease a muffin tray well
- Mix together noodles, veggies, cheese, spices and eggs
- Toss mixture with tongs and then fill about 8-9 muffin holes with noodles and press down firmly

Notes
*Store leftovers in fridge for 5 days and reheat on stovetop or microwave before eating. You can also freeze these ahead of time for 2 months

I think the USA tablespoon must equal the English dessertspoon measurement because the Thai curry meat balls almost blew our heads off. However I tempered it down using just milk & it ended up being delish! So now I give it a 5 rating.
