And considering that each year my banana bread cookie skillet is one of the top recipes on the blog, I’d assume majority of you have had it at this point. But today’s new version has a few tweaks to make it birthday cake themed. And that is mostly because I have made this for my birthday year after year and it is a personal favorite of mine! I love how easy it is to make. And it’s not too sweet and it also just hits the spot every single time.
You can also take this up another level by adding a scoop of your faoviret ice cream right on top when it’s warm out of the oven. Kind of like a brownie a la mode but banana bread birthday cake a la mode baby!

What ingredients are in this Birthday Cake Banana Bread Skillet:
- Mashed banana – you will need about 2-3 ripe bananas
- Liquid coconut oil – or use avocado or olive oil if you’d like!
- Creamy nut or seed butter – anything that is creamy works here.
- Maple syrup or coconut sugar – either works for this recipe.
- Eggs – or you can sub 2 flax eggs here as well.
- Vanilla extract + almond extract – almond extract adds the best flavor here for birthday cake feels.
- Almond flour – or sub 1 cup oat flour. please don’t use coconut flour
- Sprinkles on top and mixed in
How to make Banana Bread Birthday Cake:
- Preheat oven to 350 degrees and grease your 10-inch skillet
- In a large bowl, add the mashed banana, oil, nut butter, sugar, eggs and extracts together until combined
- Mix in in almond flour and baking powder until smooth with no clumps
- Mix in sprinkles then pour batter into skillet and add more sprinkles on top
- Bake in oven for 20 minutes then remove and enjoy!

- 1 cup of mashed banana (about 2–3 ripe bananas)
- ⅓ cup liquid coconut oil
- ⅓ cup creamy nut or seed butter
- 3 tablespoons maple syrup or coconut sugar
- 2 eggs (or sub 2 flax eggs)
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 teaspoon baking powder
- 1.5 cups almond flour (or sub 1 cup oat flour. please don’t use coconut flour!)*
- Sprinkles on top and mixed in
