This is the viral Onion-Wrapped Burger from In-N-Out! But a homemade version that is still so delicious, flavorful and easy to make at home. Plus if you don’t live by the beloved fast food chain (like me), it’s a great way to satisfy the craving. The onions as the “buns” are caramelized to perfection and filled with flavor, cheese and juicy beef. And don’t skip on the sauce!
In-N-Out is known for their yummy burgers and animal style fries. They have such a good spread and something for everyone. The sauce they make is so yummy, not too thick and the pickle relish in it goes a long way. I love having it with burgers, fries and call me nuts – but dipping pickles in it, is SO good too.
This recipe is one of our latest obsessions after making it a few times now. It went totally viral on social media and for good reason. Sometimes when I see things go viral, I question if they are actually good. But this – wow!
I love that this recipe is a great way to switch things up from a lettuce wrap if you want a lighter or low carb and gluten-free option for a burger.

What ingredients you need to make the Onion-Wrapped Flying Dutchman:
- Mayonnaise – you can use any mayo you’d like!
- Pickle relish – this is a must add in the sauce!
- Ketchup – I like to use unsweetened ketchup for no added sugar
- White vinegar – you can also apple cider vinegar
- Ground beef – I use 80/20 mix for ground beef typically. I like this ratio
- Yellow mustard or your favorite mustard – yellow mustard is traditionally used but I love dijon!
- 2 cheddar cheese or American cheese slices, cut into 8 pieces
- Avocado oil – or your go-to frying oil
- Yellow onion – cut into circular slices. I like using yellow onion or sweet white onion for this. Red onion wouldn’t give it that sweet caramelized flavor
How to make the Onion-Wrapped Flying Dutchman:
- First make the sauce/spread: mix together ingredients in a small bowl and set aisde
- Next make the caramelized onions: in a large skillet add oil then once hot add the onions and sprinkle with salt
- Cook for a few minutes until edges turn gold (I cook medium heat)
- Flip over gently and caramelized the other side for another 5-7 minutes
- Right before you take them off grill, add cheese to half of the grilled onions
- While onions cook, prepare the patties by dividing into 8 equal burger patties and season with salt and pepper
- Cook the burgers in same skillet as onions once done (add more oil if needed)
- As burgers cook, add a little mustard on top then flip over after it cooks for about 2-3 minutes
- After you flip the patties, add cheese on top of half of the patties and cook for another minute
- Add one patty without cheese on top of the cheese covered patty to create the double burger
- Gently transfer this stack onto the grilled onion and add a grilled onion with cheese on top as the bun
- Serve with the sauce and enjoy warm!
FAQs and tips on making In-N-Out’s Onion-Wrapped Flying Dutchman:
- What kind of onions work best for this? I usually use a sweet white onion or yellow onion. I wouldn’t recommend red onion for this. The sweet and yellow onion have a naturally sweeter taste.
- My onions are burning, what did I do? Caramelizing onions can be tricky! You don’t want to cook them on high heat or they will burn. Covering the onions and cooking on medium/low or even low heat works the best. If the onions are sticking, add a splash of water to the pan too.
- What kind of cheese do you use? I like cheddar for this but you can use American or anything you want.
- Can I save these for leftover? Yes of course. I do think they taste best fresh but you can warm up in oven if you have leftovers.

- 1 teaspoon yellow mustard or any mustard
Burger patties:
- 1 lb ground beef (I use 80/20 mix)
- Sea salt and black pepper to taste
- Yellow mustard or your favorite mustard, for frying
