This pepper and cucumber salad is a must try! The flavors are incredibly unique, it has the best spice to it and it takes just 5 minutes to prep. Not to mention it is perfect for the warmer mouths approaching over here!

We loved serving this over some quinoa or rice with some protein too to make it more of a meal, or you can serve it has a side dish if you prefer. It has the best crunch to it and is really refreshing as well to add to your meal.

  • What kind of cucumber do you use for this recipe? I typically use mini seedless cucumbers/Persian cucumbers but any can work
  • What if I don’t like spicy? Omit the chili oil – it isn’t a must have, it just adds flavor to the dish
  • Is this salad a meal? For me personally, no! I usually add some grilled salmon and rice or quinoa to it to make it fuller 
  • What kind of peppers do you use? I prefer red, orange and yellow bell peppers for this salad.
  • How long does this salad stay fresh for? It tastes the best day of if you add dressing to it. Otherwise it can get pretty soggy!
