I am one of those people who eat salad almost every single day. It’s not your boring type of salad though. I love up a big bowl with all the fixings and it’s so satisfying, filling and packs in so much nutrients into one meal.
This kale and rotisserie chicken salad is one of my favorites at the moment. The peanut dressing, the toppings and all the flavors and textures together are perfection. I love the mix of kale with the cabbage, the saltiness of the peanuts and parmesan cheese and the peanut sesame flavored dressing.
I love even more how this meal comes together super quickly too. We like to always get a rotisserie chicken each week to save time and add it into meals like this one. Or if you want to make your own chicken to add to this salad, you totally can.
My husband even loves this salad so this is a great meal to feed you, your partner, your roommate, or just prep a big batch to have all week long. It is so damn good and the peanut sesame dressing is also great to have on hand for other salads and things too.

What ingredients you need to make this kale and chicken salad with peanut dressing:
- Tuscan kale – I typically buy a buy of tuscan kale then further shred it thinner with a knife
- Cabbage – you can buy a head of cabbage and chop it or buy it pre-shredded if you want
- Cilantro – freshly grated cilantro is too good in this. If you aren’t a cilantro fan, you can omit
- Mint – I know it’s random but it’s so good in this salad!
- Green onions – I only use the green parts here, not the white part of the scallion
- Grated parmesan cheese – freshly grated parmesan cheese is so delicious in this. Adds some saltiness to the salad too. I like doing freshly grated cheese in it
- Peanuts – I prefer roasted peanuts in this but really anything can work!
- Rotisserie chicken – you can really use any chicken you’d like. I like using a mix of rotisserie chicken breast or thighs or the chicken from this recipe
- Peanut oil – I loveeeee the peanut oil in this. If you don’t have any or want to use a different oil, you can use olive oil but it won’t have that peanut-flavor. Or add in a little creamy peanut butter for full effect
- Sesame oil – toasted sesame oil adds so much yummy flavor!!
- Coconut aminos – love this for a soy-sauce flavor of sorts. You could use soy sauce or tamari too if you prefer
- Rice vinegar – love adding this for flavor. You could also use rice wine vinegar too if you prefer
- Honey – this is added for a touch of sweetness to the dressing. You could use maple syrup too

- Add dressing ingredients to a small bowl and whisk together

- If you don’t love kale, sub another green of choice. I love how nutritious kale is and the mixings and dressing here really cuts how bitter and harsh it can be.

Salad:
- 4 cups tuscan kale, finely chopped
- 2 cups cabbage, finely chopped
- 1/4 cup fresh cilantro, chopped

- 2 green onions, chopped the green parts only
- 1/2 cup freshly grated parmesan cheese
- 1/2 cup peanuts, chopped
- 1 1/2 cups rotisserie chicken
Peanut sesame dressing:
- 1/2 cup peanut oil

- 3 teaspoons coconut aminos
