I love apples. Like love. I don’t think a day goes by that I don’t eat apples in some shape or form. I find them to be such a yummy snack. They’re crispy, sweet, satisfying and they pair with so many other toppings and things too. I love apple and peanut butter especially. But really, what don’t I love peanut butter with?!

These peanut butter cup apple rings are the latest obsession in our house. What started as a snack I made for myself one afternoon has turned into my kids favorite after school snack. They love how it has chocolate chips or cacao nibs on top. And anything that’s like a fun finger-food of sorts just wins my kids over immediately.

These apple rings take all of 5 minutes to put together. You can pop them in the freezer or fridge to set a bit if you want the yogurt and peanut butter topping to firm up too. I personally just eat them as is but you can experiment and see what you prefer.

When it comes to the apple variety, it’s really up to you. I have used all different kinds of apples for this and my favorite is honey crisp or granny smith. Which are totally different from one another, but they are both so tasty in this recipe.

What ingredients you need to make apple rings:

  • Apples – cored and sliced into 8 rings. I usually use granny smith apples but really any can work!
  • Greek yogurt – full-fat or non-fat can both work. If you don’t do dairy then use coconut yogurt or another alternative.
  • Creamy peanut butter – creamier the peanut butter the better. If you don’t eat peanut butter, use almond butter instead.
  • Chocolate chips or cacao nibs – really either can work for these. Just depends if you want them sweeter or not.

How to make these peanut butter cup apple rings:

  1. Add the apple slices to a line baking sheet or plate
  2. Mix the yogurt and peanut butter in a small bowl until combined
  3. Evenly spread across each apple slice then sprinkle chocolate chips across
  4. Add to fridge or freezer to firm up a bit or just enjoy as is – up to you!

Tips and FAQs on making these apple ring snacks:

  • What is the best way to cut these? I use a chef’s knife to cut down the apples top to bottom. Then I cut the center out to get the seeds/core out. I usually use something with a round shape to carve it.
  • Are these a healthy snack? Yes! I call them a healthy snack. My kids love them and they think they are eating dessert. But it’s packed with protein, healthy fat and on their favorite food group – fruit!
  • I don’t eat dairy, can I use dairy-free yogurt? Absolutely. Use your go-to dairy-free yogurt that you love instead.
  • What are some other topping ideas I can use? Coconut flakes, granola, crushed nuts, anything you’d like.
  • I don’t eat peanut butter, any subs? Almond butter, tahini, sunflower seed butter all can work!
