Every night after dinner, my 5 year old goes to the freezer to pull out his dessert of choice. He 100% inherited my sweet tooth and he is a creature of habit just like his mama. 

These cereal bars are our latest obsession for dessert or a sweet snack. I love how crunchy and sweet they are with a little salty from the cereal and salted peanut butter. They’re made with all gluten-free and vegan ingredients and they’re healthier than the store-bought versions in the store.

If you have tried my Butterfinger Bars, you will love these. They are a twist on them and a rice krispie treat and they come together with a few simple steps.

I love keeping these in the freezer for a healthier sweet snack. They satisfy my craving for peanut butter cups and a rice krispie type dessert. And I love the crunch all around! I hope you love these too, let me know if you try them!

What ingredients in these chocolate peanut butter cereal bars:

  • Chocolate chips – dark, milk or semi-sweet all work for these. I love doing dark chocolate but use your favorite kind!
  • Creamy peanut butter – creamy not crunchy! If you’re not a fan of peanut butter, you can also use almond butter too or cashew butter or even tahini
  • Maple syrup – you can also use honey if you prefer over maple syrup

How to make peanut butter cup cereal bars:

  1. Line an 8×8 baking dish with parchment paper
  2. Melt chocolate chips in microwave or over stovetop (add in coconut oil if needed)
  3. Pour chocolate on top of parchment paper and spread across evenly
  4. Add to fridge for about 10 minutes
  5. While chocolate sets, warm together half of the peanut butter and 1/2 cup maple syrup in a small sauce pan over medium low heat
  6. Remove from heat and add cereal to large mixing bowl
  7. Pour peanut butter mixture on top of cereal and mix all together to evenly coat
  8. Add cereal mixture on top of chocolate and press down with spatula or greased hands to form to dish
  9. Next warm the remaining peanut butter and maple syrup together over medium low heat
  10. Once smooth pour across the top of cereal mixture and spread evenly
  11. Add to freezer to set for about an hour then slice into bars and enjoy!

FAQs and tips on making these delicious cereal bars:

  1. I am not a fan of peanut butter, what else can I use? Really any creamy nut or seed butter works. Almond butter, cashew butter or even tahini can all work.
  2. What other cereals can I use? A similar shape cereal like a Cheerio would work well. Rice Krispies would be too small so you may need more!
  3. Where should I store these? In the freezer for 2 months or in the fridge for 5 days.
  4. My chocolate base didn’t stick to the bars, what happened? When you add the cereal mixture on top of the chocolate, make sure to press down firmly so it sticks together.
  5. Can I make these into cups instead of bars? Yes! Grease or line a muffin tray and follow same steps
