THANKSGIVING WEEK BABY! And this is personally going to be the family tradition every single year because it is amazing!
If you love kugel (if youre jewish you know..) then you are in for a TREAT! This is like a savory noodle kugel recipe and it is absolutely delicious. And it got my kiddos to eat mushrooms too so I will call that a win fam. Plus you only need 4 ingredients to make it plus spices. So it is one of those recipes that is foolproof. And easy to prep in advance too and freeze it. That is actually what we did! We made them and froze it and now on Thanksgiving we don’t have to think about it and just pop it right back into the oven and boom bobby.

What ingredients are in this savory noodle casserole:
- Uncooked egg noodles
- Eggs, whisked
- Sweet onion, sliced
- Mushrooms of choice, sliced (we used shiitake, oyster and baby bella)
- Sea salt and black pepper to taste
How to make mushroom noodle pie:
- Cook the noodles per instructions then set aside to cool completely (I rinsed in cold water to prevent sticking!)
- Sauté the onions and mushrooms in a large skillet with oil of choice for about 5-10 minutes
- Allow the mushrooms and onions to cool completely
- In a large bowl toss together the pasta, eggs and cooked mushrooms and onions together with some sea salt and black pepper until fully combined
- Add the mixture to a well-greased 8 or 9 inch round or square baking dish and cook in oven for 40-45 minutes at 350 degrees F
- Allow the pie to cool for a few then slice and enjoy!

Ingredients
- 8 ounces uncooked egg noodles
- 4 eggs, whisked
- 1 large sweet onion, sliced
- 3 cups mushrooms of choice, sliced (we used shiitake, oyster and baby bella)
- Sea salt and black pepper to taste

Notes
*Store leftovers in fridge for 5 days or you can freeze for 2 months! This is a great dish to make ahead of time for holidays and then defrost overnight and reheat in oven at 350 for a bit until warm!

Is it okay to use non egg based noodles?

i haven’t tried – a classic noodle pie is with egg noodles but i don’t see why regular wouldn’t work. keep me posted!!
