This Cookie Dough Bark is hands down one of the most delicious recipes to make. It’s healthy enough to be a snack, it’s naturally sweetened and makes me feel like I am eating cookie dough straight from the freezer.
I love how this recipe is so easy to make. You only need 4 main ingredients, one bowl and did I mention how you don’t have to turn your oven on to make it? It sets in the freezer to chill instead.
My freezer is always stacked with various desserts and thinks to snack on. The moment people come to my house, they ask if I have any desserts for them to eat. Not to mention the daily consumption between myself, my husband and my 5 year old. I always like to keep things stocked up in there. We all have a major sweet tooth and I find it is such a game changer to keep the freezer stocked with healthy options.
This bark though is gluten-free, grain-free, vegan, dairy-free and it’s lower in sugar (by a whole lot) compared to your typical cookie dough recipe.

What ingredients you need to make cookie dough bark:
- Almond flour – I haven’t used another flour here. You can likely have success with gluten-free oat flour or gluten-free flour but you’d need to use a bit less. Start with 1 cup and see consistency
- Melted coconut oil – you can also use another neutral oil like avocado oil if you wanted
- Maple syrup – you can also use honey if you prefer. Or if you like the monk fruit type sweeteners, that can work as well (not sure amounts on that)
- Vanilla extract – I like to add for flavor
- Chocolate chips – I use dark chocolate here but you can use you preferred chocolate!
How to make chocolate chip cookie dough bark:
- In a large bowl, mix together almond flour, oil, maple syrup and vanilla until smooth
- Fold in chocolate chips
- Line a baking sheet with parchment paper and add cookie dough on top to spread across and form to make the bark (I use clean hands for this)
- Add the bark to freezer for about 5 to 10 minutes
- While bark chills, melt the remaining chocolate chips in microwave
- Pour melted chocolate across the bark then set back in freezer for at least an hour
- Remove from freezer, cut into pieces and enjoy!
FAQs and tips on making cookie dough bark:
- Can I make this recipe nut-free? You can try subbing gluten-free flour or oat flour. But use a bit less as almond flour absorbs more liquid than other flours. You could also do half flour half protein powder if you wanted too to make it higher in protein.
- Can I sub maple syrup with anything? Honey! Or if you prefer the sugar-free sweeteners like a monks fruit, you can use that. I personally haven’t tried so I’d start with less and sweeten as needed.
- Is this recipe vegan? It is! It is plant-based, gluten-free, dairy-free and no refined sugar if you use the chocolate chips I use.
- Can I switch up the flavor of this? You can add a spoonful of peanut butter or nut butter if you want. Add chocolate protein powder or some sprinkles if you want to do a funfetti type vibe.
