Little Bites aka MINI MUFFIN WEEK I love you oh so much!!!
Welcome to day 2 fam. Yesterday we made Copycat Mini Blueberry Muffin Bites (gluten-free) and I am beyond impressed with how many of you already made the blueberry cuties!! (#rachLlittlebitesweek baby!).
These are a classic recipe you guys. Chocolate chip muffins in mini form that you can easily pop in your mouth. To be honest – I can easily devour this entire batch after I bake them. They are absolutely delicious. And super fluffy, moist and just the right amount of sweet. Plus the chocolate chips all melted and good inside just makes them even more superior than any other snack around.
You will 100% want to freeze some of these after you bake them so you have some on hand too at all times. Ezzie is also obsessed with these. And he says they are “baby muffins” because they are little. And he uses that as an excuse to ask me for more than his usual serving. But I can’t blame him – the kid has my sweet tooth.

What ingredients you need to bake copycat Little Bites chocolate chip muffins:
- Egg (flax egg should work too)
- Non-dairy milk
- Coconut sugar
- Butter (or use vegan butter)
- Vanilla extract
- Gluten-free all-purpose flour or oat flour
- Dark chocolate chips
How to bake these mini chocolate chip muffins:
- Preheat oven to 350 degrees and line a mini muffin tray with liners and/or spray/grease well
- Melt the butter and set aside to cool
- In a large bowl, mix together egg, milk, coconut sugar, butter and vanilla until smooth
- Mix in flour and baking powder until combined
- Fold in chocolate and add about 1-2 tablespoons of batter to each muffin hole so they’re 3/4 full
- Bake in oven for 15 minutes and allow them to cool for a few minutes then enjoy!

Ingredients

Love this recipe and so does my neighbors! I was even forced to share it with them after a recent afternoon tea where these delicious nuggets were the star of the show!
I recently ran out of chocolate chips (I live in a lovely cabin way out in the countryside writing for now!). Was wondering if there was a way to make these into chocolate muffins by adding cocoa powder?
