Copycat Mini Blueberry Muffin Bites made with all nut-free and gluten-free ingredients for a delicious and healthier version of blueberry munchkins meets little bites muffins!
Raise your hand if you used to LIVE on those cutie Little Bites mini muffins!? I for one was obsessed. The chocolate chip and blueberry were staples over here. As were blueberry munchkins from Dunkin’ Donuts. Truly the most underrate flavor in my opinion. Whenever my school had munchkins and someone did order the blueberry ones for the box, I was seriously not a happy camper.
Now let’s dive into these mini muffins though. They are adorable and perfect for kids, adults, anyone!! And they are super easy to make too. They are gluten-free, nut-free and dairy-free. And they are also super adaptable to really use whatever you want. For example you can use a dairy-based yogurt if you prefer. Or use a spelt flour instead of gluten-free oat flour. Or use flax egg instead of regular egg.
That is what I love about this recipe.. besides how delicious and fluffy and prefect they are of course!

What ingredients you need to make copycat little bite blueberry muffins:
- Liquid coconut oil
- Non-dairy milk
- Non-dairy yogurt (or whatever yogurt you want)
- Coconut sugar
- Egg (or sub flax egg)
- Vanilla extract
- Gluten-free oat flour
- Baking powder
- Frozen blueberries or fresh ones
How to make these blueberry munchkin-like mini muffins:
- Preheat oven to 350 degrees and line a mini muffin tray with liners and/or spray/grease well
- In a large bowl, mix together oil, milk, yogurt, coconut sugar, egg and vanilla extract until smooth
- Mix in flour and baking powder until combined
- Fold in blueberries and add about 1-2 tablespoons of batter to each muffin hole so they’re 3/4 full
- Bake in oven for 15 minutes and allow them to cool for a few minutes then enjoy!

Entire family loved these. I happened to have Sigi’s lemon yogurt and it added a little lemon flavor which was great. Will definitely be adding this to our regular muffin rotation!
