I love a good no-bake kind of recipe. I am all about making sweet snack recipes that are nutritious but also satisfy your sweet tooth. Like these almond butter protein bars!

I do love peanut butter more than basically any food in the world. But I do also love almond butter and these almond butter protein bars hit the spot. They are so delicious and such an easy recipe to try. I can’t wait for you to make them too because they really are just a satisfying, sweet snack that also has protein in it.

These bars are truly one of mine, my kid’s and my husband’s favorite things to make. We always have them in the freezer and they take 10 minutes of effort to make. They’re perfect for a post workout snack, after lunch dessert of sorts. Or they’re great for that afternoon sweet tooth craving.

You don’t have to turn your oven on to make these or dirty a bunch of kitchen materials to make them either. This is one of those dishes I am licking the spatula clean when I add the batter into the baking dish.

What ingredients you need to make Almond Butter Protein Bars:

  • Creamy almond butter – if you want to use another creamy nut or seed butter you can! Peanut butter, cashew butter, tahini all can work.
  • Maple syrup – you could use honey if you want instead of maple syrup
  • Protein powder – I use plant-based vanilla protein powder usually for this
  • Almond flour – I haven’t tried another flour option for these bars
  • Dark chocolate chips – you can use milk chocolate if you want

How to make these no-bake protein bars:

  1. Line an 8×8 baking dish with parchment paper and set aside
  2. In a large bowl, mix together the almond butter, almond flour, protein powder and maple syrup until fully combined
  3. Add to baking dish and press down firmly using clean hands or a spatula to form it to the dish
  4. Melt the chocolate chips (use coconut oil if needed) then mix in almond butter until smooth
  5. Pour the chocolate mixture on top and spread it across the almond butter base (I sprinkle sea salt on top too!)
  6. Add to fridge to set for 1-2 hours then slice into bars and enjoy

FAQs and tips on making these almond butter bars:

  • Can I use another nut butter? Yes! Use creamy peanut butter, cashew butter, tahini or any cream nut or seed butter. Make sure there are no added ingredients. Just nuts and salt. This can impact the texture of the bar.
  • Can I use milk chocolate? Of course. I personally enjoy dark chocolate more but milk works for this recipe too.
  • What if I want to double the recipe? You can totally double this recipe when making it! That is a great idea for larger groups or if you want to keep a batch on hand in the freezer.
  • My bars are sticking to the pan, what happened? If you don’t line the baking dish then the bars will stick to the dish! It is important to line with parchment paper for easy bar removal.
