This bark is for the days you want a chocolate candy bar of sorts but also want to keep on the healthier side. This date bark is the most delicious, healthy and easy recipe to make to keep on hand for those moments. It is mad with just a few ingredients and it has tootsie roll meets snickers bar vibes. The best part is that you only need a few ingredients to make it too.
Growing up my Mom and I would snack on tootsie rolls all the time. And call me weird but dates satisfy that tootsie roll craving for me. I love all things chocolate and especially peanut butter too so all of the flavors and textures in this date crunch bark just hit the spot.
So if you love snickers and love chocolate and tootsie rolls, you must try this date bark recipe. It is one that you can keep in the freezer at all times. Or if you want to keep it in the fridge, that works too! It is really easy to make this and kids are obsessed too. My 4 year old loves the chewiness from the dates. Plus anything peanut butter is always a hit over here.
Thank you to Lina from That Health Junkie for this inspo. I am totally hooked on snacking on this now and it is a must must try.
What ingredients are in Date Crunch Bark:
- Medjool dates – pitted and soften dates! If they are too firm, it won’t work well
- Creamy peanut butter – you can also use another nut butter if you prefer but peanut butter is my favorite for this
- Nuts of choice – chopped up, I also like toasted or roasted nuts if possible but any works
- Chocolate chips – can be milk or dark chocolate, whichever you prefer
How to make Date Crunch Bark:
- Start by slicing the dates open (make sure pits are removed)
- Line a baking sheet with parchment paper and add the dates to the sheet
- Smash them down and line them up next to each other so they are touching (I use my hand to press down and form into one big date almost the size of the sheet)
- Add the crushed nuts evenly across then drizzle peanut butter across
- Add the chocolate chips and coconut oil to microwave-safe bowl and melt in 30 second increments or until melted (stir in between!)
- Next pour the melted chocolate on top of the date/nut mixture then add to freezer or fridge to set for about 30-60 minutes
- Break apart once set and enjoy!
FAQs on making Chocolate Date Crunch Bark:
- Can I use dates with pits in them? Yes but you will need to remove the pits! Otherwise the date bark won’t be edible.
- What kind of chocolate works best? Honestly you can use any chocolate you are craving. I love using dark chocolate here but milk chocolate or even semi-sweet can work.
- Is this a healthy dessert to eat? “Healthy dessert” kind of sounds like an oxymoron to me but this is definitely a great dessert option using wholesome ingredients. It is much simpler than the chocolate candy bars like Snickers or Twix!
- Can I switch up the ingredients? Of course! Add some other nuts, coconut flakes, dried fruit, anything you want. You can customize this to work for your tastebuds.
