As someone who loves caesar salad, these wraps are IT! I am obsessed with making these for lunch right now. I pick up rotisserie chicken basically every week right now to make a chicken salad of sorts. And this recipe is my favorite at the moment. 

I love having a batch of chicken salad made in the fridge so it’s ready to eat whenever. Makes getting protein in my diet so much easier. And I don’t have to put so much effort into lunch everyday when I have this on hand. Just grab the tupperware, add to lettuce wrap or even bread if I am craving instead.

My husband also loved these too. So if you are on the fence, try these lettuce cups! He was so skeptical on eating “bird food” as he said for lunch. But this made him realize lettuce wraps can indeed be delicious and filling. 

I like to do a mix of chicken breast and thighs for this for flavor. But you can really use any chicken you’d like. All breast, all thigh, whatever you’d like.

What ingredients you need to make these caesar salad lettuce wraps:

  • Cooked chicken – I used rotisserie chicken to save time
  • Caesar salad dressing – I love this one or my greek yogurt one
  • Grated parmesan cheese – I like to use a block of parmesan cheese and freshly grate it
  • Radicchio – shredded. I love adding this in for crunch but you can omit if you prefer
  • Fresh lemon juice – I like to use fresh lemon for this 
  • Crushed cup gluten-free croutons, crackers or cheese crisps – really anything to give that crunchy carb like something to add
  • Butter lettuce or romaine lettuce cups to serve

How to make chicken caesar lettuce wraps:

  1. In a large bowl, mix together ingredients. I like to use less dressing to start because you can add more as you wish
  2. Layer 2 leaves on top of each other to make each wrap
  3. Add scoops of chicken salad onto lettuce and serve

FAQs and tips on making these chicken caesar lettuce wraps:

  • If you’re not a fan of lettuce wraps, you can make this and serve as a sandwich too or as a wrap. Even over crackers is delicious.
  • This is great to meal prep if you want – add to fridge for 5 days or so. Add less dressing at first so it doesn’t get soggy. I like to dress before eating or day off. Then assemble wraps before serving so lettuce doesn’t get soggy too.
  • What kind of chicken do you use? I like to buy rotisserie chicken and use a mix of breasts and thighs. It adds great flavor to this salad. But you could also poach chicken too if you prefer.
  • Can I use store-bought dressing? Yes! This is a great option if you prefer store-bought.

  • 1/4 cup crushed cup gluten-free croutons, crackers or cheese crisps
