This is the first cheesecake recipe on the blog that actually uses cream cheese. And let me tell ya, I am here for it!

I am beyond excited by how delicious these cheesecake brownies turned out. You guys are going to go crazy over them. Especially around the holiday season we are kicking off right about now.

Full disclosure, I have never been a huge cheesecake fan. In fact that is 100% why I haven’t really made an actual cheesecake here yet on the blog. But I am all about brownies and chocolate and everything in between. So when I added cheesecake swirls into brownies, it was a match made in heaven.

With all of the baking going on around the holidays, I am all about shortcuts when needed.

And when Simple Mill’s baking mixes are involved, there is no regrets involved. You guys know by now how obsessed I am with Simple Mill’s everything. Their pizza mix? So good and makes some kick ass paleo bagels. Their sea salt crackers? Ya, they are breadcrumbs in my kale tahini caesar salad. And don’t even get me started on all of their cookies.

Today we are using the Chocolate Muffin & Cake Mix. We aren’t using the brownie mix as you guys may have anticipated. I love showing how diverse their mixes really are and their cake mix also makes the most delicious brownies! Swirled with some cheesecake, the flavors are too good.

One of my favorite parts of the Simple Mill’s Chocolate Muffin & Cake Mix are the ingredients. This goes straight across the board for their products. Everything is grain-free, sweetened with coconuts sugar and made with ingredients you’d bake and cook with at home.

What do you need to make these healthy Cheesecake Brownies?

  • 1 box of Simple Mill’s Chocolate Muffin & Cake Mix
  • Pasture-raised eggs or flax eggs
  • Coconut sugar (can sub any other non-liquid sugar)
  • Organic cream cheese (sub dairy-free if needed)
  • Vanilla extract
  • Your favorite chocolate chips

Healthy Gluten-free Cheesecake Brownies

Ingredients

Brownie layer:

Cheesecake layer:

  • 8 ounces cream cheese, at room temperature (can use dairy-free or dairy cream cheese)
  • 1/4 cup coconut sugar
  • 1 egg, at room temperature
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350 degrees and line an 9×9 baking dish with baking sheets
  2. In a medium bowl, cream together the cheesecake ingredients for about 2-3 minutes until smooth and creamy with no chunks (a stand mixer or hand mixer works best)
  3. In a large bowl, whisk together eggs, oil and coconut sugar until smooth
  4. Mix in the cake mix and stir until the batter is fully combined (I also added chocolate chips but it’s optional!)
  5. Add 2/3 of the brownie batter to the baking dish and spread across
  6. Spread the cheesecake batter on top
  7. Add dollops the remaining brownie batter on top and swirl with a knife
  8. Bake in oven for 25 minutes (or until toothpick comes out clean)
  9. Allow the cheesecake brownies to cool for a few then slice and enjoy

Notes

*You can also use this brownie recipe if you don’t have access to the mix!

*Store leftovers in the fridge for 5 days or freeze for longer

*I have not tested flax egg
