We are obsessed with this rice salad right now. It is SO full of flavor, all the right textures and it’s such an easy and healthy meal to make. You only need about 20 minutes to make it (mostly because rice takes longest to make) and you can have a healthy meal prepped in no time.

The air fryer pineapple here is my favorite. It adds the perfect touch of sweetness to the dish too and sprinkled with cinnamon on top, you guys will be obsessed. You can of course add some more protein on top too if you want. I loved this with grilled salmon!

What ingredients you need to make Pineapple Rice Salad:

  • Basmati rice – cook per instructions – I like to add a dollop of ghee or coconut oil to make the rice not dry out.
  • Pineapple – sliced with skin off and you will need cinnamon to sprinkle.
  • Cabbage or pickled cabbage – either works here!
  • Seedless cucumbers – I love buying the mini ones.
  • Red bell pepper – one of my favorites in this dish.
  • Peanuts –  you can also use almonds or cashews.
  • Cilantro – obsessed with now getting this from our garden!
  • Coconut aminos – or you can use soy sauce as well.
  • Sesame oil – I love using this instead of olive oil because it adds great flavor.
  • Rice vinegar – another great flavorful ingredient.

How to make Thai Pineapple Rice Salad:

  1. Coat the pineapple with some cinnamon and coconut oil and add to a baking sheet
  2. Air fry for 10 minutes at 400 degrees (or bake at 350 for 10-12 minutes)
  3. Remove pineapple from oven and allow it to cool
  4. Add the salad ingredients together into a large bowl and mix
  5. In a small bowl mix together dressing ingredients and then drizzle on top of the salad, mix well and enjoy!

  • Can you add protein to this dish too? Absolutely! You can add some grilled chicken, salmon, tofu, anything you’d like into this dish for protein
  • Does this salad taste good the next day? Totally. I love prepping this earlier in the week and having on hand for meals all week long.
  • Do you eat this warm or cold? I love having it cold or at room temperature. It doesn’t taste as good warm but that’s my opinion!
