Creamy Coconut Rice! How to make the most delicious and flavorful recipe with just 3 ingredients.

This is the recipe to make when you want a satisfying side dish that is flavorful, easy and affordable to make. Creamy coconut rice is always a winner in our home between my husband, my kids and myself. And it pairs so well with many different meals that it’s great to keep on hand in the fridge so you have it ready to eat whenever.
And if you are feeling fancy..add a dollop of coconut oil after it cooks for extra flavor and it makes it so rich and creamy too.

What ingredients you need to make creamy coconut rice:
- Water – we will be using a mix of water and coconut milk here
- Full-fat coconut milk – creamy coconut milk is the best and makes this rice SO creamy, delicious and a unique way to cook rice
- Basmati rice – I prefer to use organic rice whenever possible and basmati works really well here
How to make 3-ingredient coconut-y rice:
- Add water and milk to a large pot and bring to a boil
- Add in the rice and cover and cook on low heat for 18-20 minutes (or how long rice packaging says to cook it!)
- Remove from heat and fluff with a fork and enjoy!

- What is the point of cooking coconut milk in rice? it makes the rice more flavorful and creamier than usual rice.
- What can you pair this rice with? Anything you’d like! I love adding some chicken or grilled salmon with veggies to it. You can use it as a base and add anything you are craving!
- How long does it stay good for? I like to live by the 5 day rule for most things. Just warm it up in microwave with splash of coconut milk or water so it doesn’t dry out.
