Look no further then this DEEP DISH OATMEAL RAISIN COOKIE SKILLET!! It is truly one of my favorite desserts right now and I have a feeling it will be on repeat again and again.
There is really not to love about a cookie in giant form in my opinion. It has a crispy crunchy outside and the inside of the cookie is still ooey gooey and just perfect. It will melt in your mouth when you take a bite and melt your ice cream on top too if you choose to add a scoop or so on top (which I highly recommend you do!).
I also love that you’d never know this recipe is gluten-free and nut-free AND dairy-free! Plus it can easily be made vegan if you sub egg with flax egg. You can also toss in some chocolate chips and walnuts or whatever else you’re craving too before you bake it. I swear you guys are going to be in complete heaven when you take your first bite. What ingredients you need to make this giant oatmeal raisin cookie skillet cake:
- Egg (you can likely use flax egg too)
- Coconut sugar
- Solidified coconut oil
- Vanilla extract
- Gluten-free oat flour
- Gluten-free rolled oats
- Raisins
How to make a deep dish oatmeal cookie:
- Preheat oven to 350 degrees and grease a 6 or 8-inch round skillet (6-inch will make it a deeper dish cookie and 8 will be a little thinner but still thick!)
- Melt coconut oil in microwave and allow it to cool for a few
- In a large bowl, whisk together egg, sugar, oil and vanilla until smooth
- Mix in the flour, oats and baking powder until fully combine
- Fold in raisins then spread the dough across the skillet
- Bake in oven for about 25-30 minutes (or until ready)
- Serve as is or add your favorite ice cream on top!

*Store in airtight container for 3 days, fridge for 5 days or you can freeze this for up to 2 months! I love eating it frozen too.
