Wow your fam and friends with this new way to eat pigs in a blanket guys. I love the sausage ones even more than hot dog tbh and even mcjordO who is the king of all things pigs in a blanket – absolutely loved these. Plus you’d never know they’re paleo and healthier for you too. The dough itself is super easy to make too. The only annoying part is putting it in the fridge to set for a bit before you roll it out into the blanket.

What ingredients are in these paleo pigs in a blanket:
- Almond flour
- Cold butter, cut into smaller pieces
- Eggs
- Sausage links (cooked), cut into 1 inch pieces
- Dipping ideas: ketchup or mustard!
How to make these sausage in a blankets:
- Add the almond flour, butter and eggs to a food processor and pulse until smooth (I stopped and scrape down edges 1-2x)
- Remove dough from the food processor and divide into 2 balls then wrap each in plastic wrap and add to fridge for at least 30 minutes
- Next roll out each ball (1 at a time) on a floured surface then cut into triangular strips
- Add 1 piece of cut sausage to each triangle and roll the dough to form the “blanket”
- Repeat for remaining ball of dough and sausage
- Warm oven to 400 degrees and cook them for about 15 minutes or until golden brown on the edges
- Allow them to cool for a few (we like to put on a cooling rack) then enjoy with desired dip!

Notes
*Store leftovers in fridge for 5 days and reheat in oven or you can be crazy like me and eat cold!
