These Pumpkin Shaped Quesadillas are a hit with all ages but especially kids! Using your favorite tortillas, cheese and a pumpkin cookie cutter.
These cutie pumpkin shaped quesadillas are the ultimate (easy) kid’s meal to make for Halloween. And they are incredibly easy!! Even if you are someone who is like “I could not make cute lunches or meals for my kids” – you can 100% make these.
You only need tortillas, cheese and pumpkin shaped cookie cutters – it’s that easy!
We love adding in other quesadilla mix-in’s too like veggies, protein, anything we have on hand. And it’s one of those meals that my kids will always eat and never argue about. These make for an easy 5 minute meal/snack and you can really use anything you have on hand to make them. I usually pair them with some snacks on the side like veggies, fruit and my 3 year old needs his dessert post dinner too (of course).
Tip: use any of your favorite quesadilla mix-in’s in these pumpkin shape quesadillas for Halloween!
What ingredients you need to make pumpkin shaped quesadillas:
- Tortillas – I used almond flour ones but any work, just make sure they’re soft/pliable
- Sliced cheese of choice – I usually use organic cheddar but any works!
- Pumpkin shaped cookie cutter
- Optional: any other mix-in’s for the quesadillas like spinach, chicken, etc.
How to make pumpkin shaped quesadillas:
- Make sure tortilla is soft/pliable then take cookie cutter and cut into pumpkin shapes (I get about 2 pumpkins per tortilla!)
- Add cheese and desired fill-in’s to tortillas then cook over a greased skillet on medium heat
- Flip after 3-5 minutes and cook for another 3 minutes or so
- Serve with desired sides (we did “ghost bananas”, “mummy cucumbers” and my vegan butterfingers
Tips for success making pumpkin quesadillas:
- These are always a hit with my kids! I make them for an easy snack/meal and pair it with some fresh fruit and veggies with a Halloween theme
- You can use any mix-in’s you want with the cheese like spinach, chicken, anything!
- I also make these for my kid’s for school lunch box too. It’s one of those meals my son doesn’t mind eating cold either
- These can make a great Halloween appetizer for a party or get together too! They make for great “finger food”
