There is no such thing as too much granola in my opinion. An absolute staple in my daily life (not kidding) and on most mornings you can find me shoveling this into my mouth as I nurse Ezra and patiently wait to eat my breakfast.
Usually I am all about the crunchy granola and I even keep it in the fridge 99% of the time. But today, we are switching things up.
We are making CHEWY granola for the first time on the blog!
For some reason the word “chewy” really is just one of those words that kind of grosses me out. Similar to how “moist” may bother some (but not me), “chewy” is something that makes me kinda of like “uhhh..”.
But truthfully there is no other word to describe the texture of this granola. It really turned out so chewy and I am pretty sure its from the mashed banana added to the mix.
Did I mention there is no sugar added to this granola besides banana and the chocolate chips?! It is insane. And usually it’s the sugars the give the granola the extra clusters.
This granola is also vegan and grain-free
It’s made with a mixed nut base of almonds and pecans and then I use some coconut flakes mixed with Garden of Life’s Organic Flaxseeds. These flaxseeds are not only a staple for me now, but also Ezra. I sprinkle them in his oatmeal almost everyday for extra nutrients.

The Best Chewy Banana Bread Granola with Clusters made with all grain-free ingredients and sweetened with only banana and chocolate chips!

Ingredients
- 1.5 cups raw almonds, roughly chopped
- 1 cup raw pecans, roughly chopped
- 1 cup unsweetened coconut flakes
- 1/2 cup Garden of Life Organic Ground Flaxseed
- 1/2 teaspoon cinnamon
- 1 medium banana, mashed
- 1/4 cup Garden of Life Organic Extra Virgin Coconut Oil, melted and cooled
- 2 tablespoons hot water
- 1/3 cup dark chocolate chips (code RACHL for free shipping)
Instructions
- Preheat oven to 350 degrees and line a large baking sheet with parchment paper
- In a large bowl, mix together the almonds, cashews, pecans, coconut flakes, flaxseed and cinnamon and evenly toss
- In a small bowl, mix together the banana, coconut oil and water then pour on top of the nut mixture and mix well to evenly combine
- Pour the granola on the baking sheet and press down into the sheet forming a large rectangle, filling up the sheet (this is to help make clusters)
- Bake in oven for 15 minutes then rotate the baking sheet and bake for another 15 minutes
- Remove from oven (it should be one large cluster) and allow the granola to cool for a few then toss the dark chocolate chips on top
- Break the large cluster into smaller pieces and enjoy!
Notes
*Store leftovers in fridge for 2-3 weeks
