I thought I was transitioning into full on fall mode over here. Testing all of the pumpkin and apple things.

But then I walked into ACME Markets the other day and saw that their Open Nature® Almond Milk Non-Dairy Frozen Dessert was on sale. I bought 2 pints of the Chocolate Fudge Brownie flavor and knew I had to make something delicious with it.

And you guys know how much I love anything with cookies, so obviously I made some flipping good CHIPWICHES!

Chipwich ice cream sandwiches are the best summer dessert.

Chipwiches were my go-to order at the ice cream truck growing up. I loved that I a) got to eat 2 cookies within one dessert and b) it combines two of my favorite things: ice cream plus cookies. What’s not to love?

I used my infamous Almond Flour Chocolate Chip Cookie recipe and turned them into these insanely good chipwiches. I picked up all of the ingredients for these over at my local ACME Markets, but you can find them at an Alberstons Companies store near you including Albertsons, Safeway, Jewel-Osco, Vons, Pavillions, Randalls, Tom Thumb, Shaw’s Star Market and Carris/Safeway. And a little known fact about us – we live next door to Acme. It is my go-to when I need a variety of different things. I love love their organic produce section and they have a lot of my pantry staples too with their own brand, Open Nature.

I use the Open Nature almond flour and their creamy cashew butter in the cookies. Plus that non-dairy dreamy brownie ice cream I told you about? Yup! That is Open Nature at ACME too. The cashew butter is the creamiest I have ever seen and I love that it has no added sugars. And the almond flour is the perfect blanched almond flour consistency. It works so well in all of my almond flour recipes here on the blog.

Plus ACME also offers grocery delivery and pick up for a super convenient way to shop. This has been a game changer during the pandemic and not wanting to go to the store so much!

The ingredients you’ll need to whip these chipwiches up:

I love how simple they are and beyond delicious. Plus the cookies are grain-free, vegan and have no refined sugars.

  • Flax egg – using ground flaxseeds or you can sub 1 regular egg
  • Creamy cashew butter – I used Open Nature brand from ACME
  • Maple syrup – you can also use honey
  • Liquid coconut oil – or use melted butter, ghee or avocado oil
  • Non-dairy milk – any kind works! Almond, coconut, oat, anything!
  • Almond flour – I used Open Nature brand from ACME
  • Dark chocolate chips – code RACHL for free shipping
  • Ice cream of choice – I used Open Nature Almond Milk Fudge Brownie Open Nature brand from ACME

How to make homemade healthier chipwiches:

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper 
  2. In a large bowl, mix together the egg, nut butter, maple syrup, oil and vanilla extract until smooth
  3. Mix in the flours and baking powder until well combined then fold in chocolate chips
  4. Spoon about 2-3 spoonfuls of dough into your hands to form cookie and add to baking sheet
  5. Bake in oven for 12-15 minutes
  6. Allow the cookies to cool for a few minutes (I added to cooling rack)
  7. Once cookies are cooled, add a scoop of ice cream onto one cookie then sandwich another cookie on top and gently press down and enjoy before ice cream melts!

  • 1 flax egg (1 tablespoon ground flax + 3 tablespoons warm water)*
  • 1/3 cup creamy cashew butter (I used Open Nature brand from ACME)
  • 1/3 cup maple syrup
  • 3 tablespoons liquid coconut oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cup almond flour (I used Open Nature brand from ACME)
  • 3 tablespoons coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 cup dark chocolate chips (code RACHL for free shipping)
  • Ice cream of choice (I used Open Nature Almond Milk Fudge Brownie from ACME)

Instructions

*Store leftovers in freezer. I individually wrapped each and froze them for easy access
