The Easiest Healthy Mac & Cheese made with all gluten-free ingredients and some of my favorite organic bone broth for extra flavor and nutrients!
You can thank my random craving for mac & cheese a couple weeks ago for this recipe.
I grew up eating mac & cheese a lot. There was some homemade mac and a whole lot of Kraft because that is all this girl would eat. Except no elbows or traditional noodles. I only liked the cartoon shapes (so weird).
Now that Ezra is officially eating everything in sight, I want to make sure I am feeding him wholesome ingredients (when I can control it). But I also want to make sure he is getting those childhood classics we all love and crave.
Plus this mama was randomly craving some classic mac & cheese a couple weeks ago, so naturally the craving had to be satisfied.
What I never realized about making mac & cheese is how easy it is. And I’m talking the homemade kind. It sounds 10x more intimidating than it actually is. For starters you only need a few ingredients to make a cheesey sauce (we will get to that soon) and it was ready in less than 10 minutes!
What we need to make the easiest healthy Gluten-free Mac & Cheese:
- CHEESE. The most important component in mac & cheese. I went with organic white cheddar for this. Any cheese you are craving works though. I used shreds so it was easier to melt together when making the sauce.
- Organic bone broth. I used Bonafide Provision’s Organic Turkey Bone Broth to add a lot of flavor to this. Instead of water, I love using bone broth for a lot of my savory cooking. Bonafide Provisions makes the most delicious organic bone broth that I have been using for years now. I drink a cup everyday thanks to the extra nutrients it adds to my diet and also cook with it. You can use any of their broths in this recipe. I chat more on bone broth in this blog post.
- Pasture-Raised butter. Butter is a must in mac & cheese! It gives it that creamy rich flavor.
- Coconut milk. I use full-fat coconut milk in this for the milk. You can definitely use traditional dairy milk too, but I figured with the cheese and everything, this would be great instead.
- Gluten-free noodles of choice. Can’t go wrong with any! Make whatever shape you are craving.

How long did you cook the banza pasta? Every time I use their noodles they don’t retain their shape well and break apart and almost turn mushy if that makes sense?
Rachel
i usually follow whatever the time says on the box 🙂
Emily
Why do you cook with gluten free pasta?
Rachel
i cook with any pasta 🙂 but many of my readers prefer gluten-free due to allergies

My sauce never thickened up and stayed pretty soupy. It was still delicious but wondering what I did wrong?
Rachel
hmmm sounds like the flour was left out! did you follow the measurements exactly??
Brittany
Hey Rachel! I plan to make this tonight – so excited!! Just a QQ – would the Bonafide Provisions chicken bone broth work, instead of turkey? I have some on hand, but don’t want to mess up the flavor. Thanks so much!
Rachel
absolutely!!! i hope you love 🙂

I would love to make this for my family but quick question, can they taste the coconut milk? Some family members do not like coconut milk! Thanks!
Rachel
you can totally sub any milk you want!! almond too works 🙂
Shannon
This was yummy, was very soupy! Would have preferred a thicker, creamier mac n cheese.
Rachel
hi shannon! sorry to hear it was soupy! did you use full fat coconut milk and the exact ratios of all ingredients? it should be very creamy!

Hi Rachel! I saw earlier that you saw an Almond milk would work too. But if I use an almond milk should I expect any change in the consistency? I have almond milk on hand but can always go and get the coconut milk since I think there are several other recipes I will use it for!
Rachel
it should be okay!! i love the creaminess canned coconut milk adds but almond works
Emma
This is the creamiest mac and cheese I have ever had. I love it! My family loved it and it really made me feel like a kid again 🙂
Rachel

I’ve been craving Mac & cheese and this was AMAZING! I did use double the flour because I was using GF All Purpose Flour & it needed more! Thick, creamy & cozy.
Rachel

Rachel
Can I use regular flour?
Rachel
i don’t see why not but i haven’t tried!
Olivia
Is there a replacement to the oat flour?
