I’m talking straight out of the clouds good. This is one of those recipes you will make over and over again.
Funfetti baked oatmeal that serves ONE everybody. And it just so happens that this recipe is gluten-free, vegan and nut-free. Plus there is no added sugar (although you can totally add some maple syrup or honey if you want to sweeten it up a bit!). And what the beep is better the eating something funfetti and delicious and *not* having to share it with anyone.
You only need a few ingredients to whip this up. And it is one of those recipes you can make either first thing in the morning. or you can make it the night before and reheat if you want. It’s a quick and easy recipe and it makes the mornings 1000000x better – I promise!

What ingredients you need to make gluten-free cake batter baked oatmeal:
- Gluten-free rolled oats
- Unsweetened applesauce, yogurt (I used coconut yogurt), or mashed banana
- Non-dairy milk of choice
- Vanilla extract (I like adding a splash of almond extract when I have it!)
- Creamy nut butter (code RACHL for free shipping)
- Cinnamon
- Sprinkles of choice
How to make vegan funfetti oatmeal bake:
- Preheat oven to 350 degrees and grease a small ramekin with oil/spray
- Combine ingredients in a small bowl and mix well to evenly combine
- Pour into ramekin then bake in oven for 20-22 minutes (or until fully cooked)
- Drizzle with extra nut butter on top if desired, spoon and enjoy!

Ingredients
- 1/2 cup gluten-free rolled oats

- 1/4 tsp vanilla extract (I like adding a splash of almond extract when I have it!)
- 1/2 teaspoon baking powder
- 1/4 tsp cinnamon
- Sprinkles of choice
Instructions
- Preheat oven to 350 degrees and grease a small ramekin with oil/spray

*If you make in advance, store in fridge and reheat in microwave or oven

Whipped this up last night to warm up this morning bc not having to worry about breakfast is the best! Daughter and I both loved it and will definitely make again! She loved helping make the recipe too. We just threw some sprinkles right into the oatmeal.

Awesome!! Made this today with my toddler. We used the apple sauce version. Rave reviews from the whole fam. She thought she was getting an extra special treat because of the sprinkles, and I loved the ingredients.
This will definitely become a go-to that I can prepare while everyone else is still sleeping to have ready for when everyone wakes up on those busy mornings 🙂

Made it this morning and it was delicious!
I didn’t have funfetti, but i topped it with more yogurt (i used yogurt inside) and sour cherries. Next time i want to use applesauce in the mixture.
Overall, loved it, will make it again! It was so easy and fast. And fulfilling, btw!
