I’m talking straight out of the clouds good. This is one of those recipes you will make over and over again.

Funfetti baked oatmeal that serves ONE everybody. And it just so happens that this recipe is gluten-free, vegan and nut-free. Plus there is no added sugar (although you can totally add some maple syrup or honey if you want to sweeten it up a bit!). And what the beep is better the eating something funfetti and delicious and *not* having to share it with anyone.

You only need a few ingredients to whip this up. And it is one of those recipes you can make either first thing in the morning. or you can make it the night before and reheat if you want. It’s a quick and easy recipe and it makes the mornings 1000000x better – I promise!

How to make vegan funfetti oatmeal bake:

  1. Preheat oven to 350 degrees and grease a small ramekin with oil/spray
  2. Combine ingredients in a small bowl and mix well to evenly combine
  3. Pour into ramekin then bake in oven for 20-22 minutes (or until fully cooked)
  4. Drizzle with extra nut butter on top if desired, spoon and enjoy!

Ingredients

  • 1/2 cup gluten-free rolled oats
  • 1/4 cup unsweetened applesauce, yogurt (I used coconut yogurt), or mashed banana
  • 1/4 cup non-dairy milk of choice
  • 12 tablespoons creamy nut butter (code RACHL for free shipping)
  • 1/4 tsp vanilla extract (I like adding a splash of almond extract when I have it!)
  • 1/2 teaspoon baking powder
  • 1/4 tsp cinnamon
  • Sprinkles of choice

Instructions
