Healthy Apple Pie Baked Oatmeal

There is no cozier and more delicious breakfast out there than baked oatmeal. Agreed?

I flipping love making oatmeal bakes. For starters, they are so easy and versatile. You can just toss anything in them and usually it turns out perfect. I also love that they are filling and nutritious. Plus I give them to Ezra too, and he has loved them since he could even eat.

This new recipe though – what a delight! Apple Pie Baked Oatmeal? Like hello fall just threw up all over this and I am not mad about it.

I love topping this off with some nut butter and a side of coconut yogurt. It makes for the best breakfast ever and it always hits the spot.

Plus you can stash half of it in the freezer too if you have leftovers. It is a great meal to keep on hand when you want to stock up the freezer with all the goods. And I link to a few other favorites below for easy breakfasts!

Ingredients you’ll need to whip this dreamy baked oatmeal up:

  • Unsweetened applesauce
  • Creamy nut or seed butter – I used tahini but anything works
  • Non-dairy milk – anything you have. Oat, almond, coconut, etc.
  • Gluten-free oat flour – I haven’t tested another flour but almond may work too
  • Rolled oats – or use quick oats. Steel cut oats are too tiny
  • Cinnamon
  • Apple – any kind! Of course I use honey crisp usually!
  • Pecans – or any nut you have

How to make apple pie baked oatmeal:

  1. Preheat oven to 350 degrees and grease an 8×8 or 9×9 baking dish
  2. In a large bowl, mix together applesauce, nut butter, milk, flour, oats, baking powder and cinnamon then fold in apples and pecans.
  3. Add to baking dish and spread with a spatula so it is even across the dish
  4. Bake in oven for 25-30 minutes or until ready
  5. Slice into bars and enjoy!

Ingredients

  • 1 cup unsweetened applesauce
  • 1 cup oat milk (or sub any non-dairy milk)
  • 2/3 cup creamy nut or seed butter (I used tahini!)
  • 1 1/3 cup oat flour*
  • 1 1/2 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 cup chopped apple (any kind – I leave skin on!)
  • Optional: 1/3 cup chopped pecans

Instructions

  1. Preheat oven to 350 degrees and grease an 8×8 or 9×9 baking dish
  2. In a large bowl, mix together applesauce, nut butter, milk, flour, oats, baking powder and cinnamon then fold in apples and pecans if using
  3. Add to baking dish and spread with a spatula so it is even across the dish

Notes

*Store leftovers in airtight container for 5 days or freezer for longer. This is a great freezer food to keep on hand and defrost as needed.
