When anyone asks me if I froze things for when the baby comes… I literally just think of the amounts of banana bread I have in there.

And this salted caramel one is hands down one of my favorites to date. It is made with all vegan and gluten-free ingredients. And it has a delicious homemade caramel sauce in the center and on top. It is absolutely to die for.

This is definitely one of those banana breads that is on the sweeter side compared to a lot of my other banana bread recipes. Thanks to the caramel sauce and it has a little sprinkle of sea salt in it, making this banana bread even more flavorful. This is the type of recipe you can bake and enjoy for breakfast, brunch, snack, dessert – pretty much anything.

I love warming up a slice and adding some coconut ice cream on top – it is too die for!

This Vegan Salted Caramel Banana Bread is the ultimate healthy gluten-free banana bread recipe. What ingredients you need to make vegan and gluten-free Salted Caramel Banana Bread:

  • Full-fat coconut milk (with the cream!!)
  • Coconut sugar
  • Vanilla extract, cinnamon and sea salt
  • Mashed bananas
  • Liquid coconut oil
  • Non-dairy milk – any variety works!
  • Gluten-free oat flour – I haven’t tested another flour
  • Almond flour – I haven’t tested another flour
  • Walnuts – or you can use pecans or anything you wish!
  1. Begin making the caramel but adding milk, coconut sugar, vanilla and sea salt into small pot and bringing to a boil
  2. Turn heat to medium low and let the caramel boil for 10-15 minutes
  3. Then remove from heat and store in fridge for a bit while we prep the banana bread
  4. Preheat oven to 350 degrees and line a loaf pan with parchment paper or grease well
  5. Mix together bananas, oil, coconut sugar, milk and vanilla until creamy
  6. Mix in flours, baking powder and cinnamon until well combined
  7. Fold in walnuts then add 1/2 the batter to loaf pan
  8. Drizzle 4-5 tablespoons of the caramel on top then the remaining batter
  9. Bake in oven for 50 minutes or so (I stick a toothpick in to see if it is ready!)
  10. Allow the bread to cool for a few and pour desired amount of caramel on top then slice and enjoy!

Salted caramel:

Banana bread:

  • 1 1/2 cup mashed bananas

  • 4 tablespoons non-dairy milk

*Store leftovers in airtight container for 3 days or fridge for 5 days. Or you can freeze for 2 months
