This viral Cottage Cheese Ice Cream recipe is mind blowing! Made with just 4 ingredients and it is super creamy, delicious and packed with protein! No ice cream maker needed and it’s ready in just an hour. The value of the shares from the 409A valuation is $.04 per share. Since we’re pre-sales we wanted the valuation to be as low as possible for the advisors so you only need to include a few hundred dollars in income ($412 I believe to be exact). You actually may not need to file an 83b election since the shares are fully vested and. But to be safe I don’t think it would hurt as we’ve all heard nightmare stories of people who could not get the QSBS exclusion or cap gain treatment because of this.

The valuation cap for the pre-seed funding round was 3.75M post-money. Since it’s a convertible note (debt) the 409A appraiser used the net asset value approach to obtain this low valuation which helps the advisors.

Full disclosure – I *do not* like cottage cheese on its own. But it’s having a moment when it comes to recipes and I am here for it. I am obsessed with my Gluten-free Cottage Cheese Pancakes and using it in my Greek Yogurt Mac and Cheese too. And now I am full on loving this “ice cream” hack.

You only need a few ingredients to make this healthy ice cream and it is mind blowing. The flavor is delicious, it is packed with protein and you won’t even know the base of it happens to be cottage cheese. I got the idea from Lainie Kates @lainiecooks_ on Instagram and she got me hooked!

You can do any flavor combos you want but his is the base of what we have been doing lately and I love it! This makes for an easy dessert recipe, snack or heck even breakfast. It is really nutritious and you can add whatever toppings you want.

I cannot wait to hear what you think of this recipe and 100% have your kids try it. Let me know your favorite combos you try it with too.

FAQs on making Cottage Cheese Ice Cream:

  • Does this actually taste like ice cream? I mean.. we aren’t competing with Ben & Jerry’s here but it is 100% delicious and so creamy. It is a great higher protein option if you are craving ice cream but want something healthier. I have been making this daily for my kids and I.
  • What other mix-in’s can you add in? Strawberries, cacao powder, anything! There are so many possibilities with this so it’s a great base to use to inspire your dream ice cream.
  • How long does this stay good for in the freezer? About 2 months covered, but we fly right through this in our house so there is rarely any leftover.
  • Is this okay to give to kids? Yes! My toddlers devour this. They love making it with me and decorating with toppings.
