Just talking about mac and cheese gives you the cozy feels right? It is a staple comfort food and one that is always a go-to in our home. It fuels the soul and always can satisfy your cravings. Plus what I love about *this* particular mac and cheese is that there is protein in it from the greek yogurt. 

Greek yogurt is such an underrated ingredient to put in this dish and one that makes the cheese sauce creamy and protein packed. The sauce is creamy, cheesy and you will be obsessed with making this too!

What ingredients you need to make protein-packed Greek Yogurt Mac and Cheese:

  • Gluten-free pasta of choice – really any shape works like elbows, penne, fusilli, whatever your favorite is! And if you’re not gluten-free, use any noodle
  • Sharp cheddar cheese – I usually buy a block and grate it fresh but you can buy pre-grated 
  • Plain greek yogurt – The main ingredient here. I don’t recommend a sub for this but any plain unsweetened yogurt works
  • Paprika, sea salt and black pepper to taste

How to make gluten-free Greek Yogurt Macaroni and Cheese:

  1. Cook the pasta per directions on the package. Drain and reserve 1/2 cup of the water you cooked the pasta in
  2. Add the pasta back to the pot and add in the cheese, yogurt, spices and a few tablespoons of the water as needed to mix until you get the right consistency
  3. Serve while warm!

FAQs on making this one-pot mac and cheese:

  • You can easily make this with any variations you want too by adding in some extra fixings. We love adding in some frozen broccoli, shredded chicken, breadcrumbs, etc.
  • If you aren’t gluten-free, you can use plain pasta, whole what or anything you want. 
  • If you want to make this lower fat than use a low-fat yogurt of sorts. But I do think that the thicker creamier yogurts are best for this recipe.
  • Don’t forget to reserve the pasta water. You will need some of it to make the sauce and mix everything together well when you toss it all together after the pasta cooks.
