Welcome to the week of GROUND MEAT RECIPES! Probably the most random flipping thing in the world to blog about. But I found myself in full on “clean out the freezer mode” recently. And I always always have ground meat on hand and I am always whipping up easy meals using it.
Typically we keep ground chicken, turkey and beef on hand at all times. I also love lamb so much and Jord loves pork. But it’s not something we cook every week. Chicken, turkey and beef are really our go-to’s on the weekly rotation. And there are SO many possibilities on what to make with ground meat. As you will see here on the blog this week. I have 4 delicious recipe that are all easy to whip up and make for simple weeknight family dinners.
Staying inspired in the kitchen doesn’t need to be fancy or time consuming. And that is what my goal with this week is. I want to show you guys how you can take ground meat from the fridge or freezer and turn it into so many different things. We have these burrito bowls, teriyaki meatballs, lettuce wraps and stuffed peppers all on deck. Plus there are a ton more other recipes here on the blog that use ground meat like:

What ingredients are in these 20-minute burrito bowls:
- Avocado oil
- Small onion, sliced into thin strips
- Bell peppers, sliced and seeds taken out
- Ground meat of choice (beef, chicken or turkey all work great!)
- Chunky salsa of choice
- Cooked rice (basmati or brown work well or cauliflower rice for grain-free)
- Black beans, rinsed and washed
- For serving: chips, guacamole, cheese, cilantro or avocado slices and extra salsa!
How to make healthy burrito bowls:
- Warm a large skillet with oil and add onion and peppers
- Cover and cook over medium heat for 5-7 minutes or until browned to your liking (I also like letting this sit and cook on low to really brown too if I have time)
- Remove peppers from pan and add in the meat
- Cook meat on medium heat and break into smaller pieces with wooden spoon or spatula
- Cook meat for 5-7 minutes until fully cooked then add in salsa and mix together
- Arrange burrito bowls by adding desired amount of mix-in’s in your bowl and enjoy!

Ingredients
- 1 tablespoon avocado oil

Notes
*Leftovers stay good in fridge for 5 days. I recommend adding the cilantro, avocado or guacamole right before eating
