OMG YOU GUYS!!!! Say hello to your new favorite cookie recipe. The PANCAKE COOKIE! AKA what to make when you either want a little breakfast action after dinner. Or when you want cookies for breakfast. Both of which are a-okay in my book.
I have to give a major shout out to Krusteaz for inspiring this recipe to happen. I am absolutely obsessed with their pancake mix. The buttermilk mix is a staple over here for classic cakes and for twists like my INSANE Blueberry Crumb Cake Pancake Skillet! We have a huge family size bag that makes 180 pancakes. And let me just say – we are going through it way too quickly. Their mix has no artificial flavors, colors or preservatives. Plus it has you feeling all confident in the kitchen because of how easy they make it for us to whip up a stack of pancakes. Or in this case.. COOKIES!
These cookies come together with just 6 ingredients and they will be a new family favorite for all of my blueberry pancake lovers out there. Plus with the melted white chocolate chunks – you guys will be in heaven.

What ingredients you need to make these blueberry pancake cookies:
- Unsalted butter, softened
- Egg (I haven’t tried flax egg)
- Maple syrup (I don’t recommend another sugar)
- Krusteaz Buttermilk Pancake Mix
- Frozen or fresh blueberries
- White chocolate chips
How to make pancake cookies:
- In a large bowl, cream together the butter, egg and maple syrup until creamy
- Add in the pancake mix and mix again
- Fold in the blueberries and white chocolate chips then add the dough to the fridge to set for 15 minutes or so
- Preheat oven to 350 degrees and line a large baking sheet with parchment paper and/or grease well
- Scoop about 2 tablespoons of cookie dough into your hand and roll into a ball and add to baking sheet. Repeat for the rest of the dough
- Bake for 13-15 minutes or until the cookies are just about to golden on the edges
- Allow the cookie to cool for a few then enjoy!

Ingredients

*Store in airtight container for 3 days or freezer for 2 months

The tastiest cookies I’ve ever made!! So fluffy and delicious. They look beautiful too. I didn’t put the dough in the fridge to cool, and I’m not sure I creamed the butter correctly… but they still turned out wonderful! 🥰
