Chocolate chips IN my Funfetti Cookies? oh YES!
I have a feeling you guys are going to be obsessed with these cookies.
In fact, I can confidentially say that you will be obsessed with them. I’m not sure what took me this long to combine a sugar cookie type recipe with a chocolate chip cookie recipe, but I’m happy these worlds finally collided.
Here’s what I love about these cookies:
- They are made with only 6 key ingredients
- These cookies take 15 minutes to whip up
- The cookies are gluten-free, vegan and dairy-free and a healthier cookie to top it off
- They have a little crunchy outside but the center basically melts-in-your-mouth and has a ooey gooey texture
- Funfetti + chocolate chips are a match made in heaven
Here are the ingredients you’ll need for funfetti cookies:
- Maple syrup for the sugar. Haven’t tested a coconut sugar here, but I don’t recommend it as it will add a grainy texture
- Creamy nut butter. I personally love using cashew butter in this because it is really creamy and has a mild taste. Almond or peanut butter work too though. Anything of the creamy consistency will be perfect. You can even use tahini if you want!
- Almond flour + gluten-free oat flour. I don’t mix grain and grain-free flours often but I love the texture of these cookies and I am convinced it is from mixing both together (I haven’t tested any subs).
- Vanilla + almond extract. You can use just one or the other you want, but if you have both – use them! Almond extract is great in funfetti/sugar cookie type recipes
- Dark chocolate chips + organic sprinkles. You can use the code RACHL for free shipping on this chocolate!

Ingredients
- 1/2 cup creamy nut butter (I used this cashew butter – code RACHL for free shipping)
- 1/4 cup maple syrup (haven’t tested coconut sugar)
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 cup almond flour
- 1/3 cup gluten-free oat flour
- 1/2 teaspoon baking powder
- 2 tablespoons sprinkles
- Dark chocolate chips (I use these gems – code RACHL for free shipping!)
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper
- In a large bowl, cream together the nut butter, maple syrup, vanilla and almond extract
- Mix in the flours and baking powder until well combined
- Fold in the sprinkles and dark chocolate chips
- Add about 2 tablespoons of dough into your hand and roll into a ball then gently press down and add to baking sheet for each cookie
- Bake for 10 minutes and enjoy!
