These easiest 3-ingredient No Bake Peanut Butter Cookies are the ultimate quick and easy dessert that don’t require the oven and they are gluten-free, dairy-free and grain-free.

YUP – right here, right now. We are making the easiest peanut butter cookie that are fudgey, delicious and you don’t even need to turn on your oven.
You just need one bowl, 3 ingredients and a few minutes of patience to let them set a bit in the freezer or freezer.
These cookies are what I like to call the lazy girl cookie if you will. Something you can easy make anytime of the day and you will also always have them on hand since you store them in the freezer so they’re good for awhile.
They are also only made with 3 ingredients, which is truly a game changer. But you can also add in any mix-in’s you want like chocolate chips if you want to spice things up. Or dip them in some melted chocolate too for a chocolate shell type thing.
I intentionally use peanut butter in these cookies because you guys know how much I love my PB. But if you can’t peanut butter, you can use any nut butter you’d like. They would be great with almond butter too.
What ingredients you need to make these easy healthy no-bake peanut butter cookies:
- Creamy peanut butter – code RACHL for free shipping on my favorite peanut butter. You can also use whatever nut butter you have/want
- Coconut flour – I haven’t tested another flour here. Coconut flour works best to absorb the oils
- Wedderspoon Manuka Honey – code RACHL for 25% off the best manuka honey ever! You can use any of their varieties that they offer. I used the organic in this but I have also used their other manuka honey and it worked so well. How to make these gluten-free peanut butter cookies:
- In a large bowl, mix together all of the ingredients until dough forms
- Scoop about 1-2 tablespoons of dough into your hands and roll into a ball and add to a plate or small baking sheet and repeat for remaining dough
- Press down with a fork in each direction so the cookies flatten a bit
- Add to fridge for 30 minutes or freezer for 15 minutes to set for a few then enjoy!
- You can also melt chocolate to drizzle on top, mix in any nuts or chocolate chips, coconut flakes – anything!

Ingredients
- 1/2 cup creamy peanut butter (code RACHL for free shipping)
- 1/2 cup coconut flour
- 1/4 cup Wedderspoon Manuka Honey (code RACHL for 25% off)
Instructions
- In a large bowl, mix together all of the ingredients until dough forms

*Store cookies in fridge for 5 days or freezer for longer
**You can use any nut butter if you don’t have peanut butter but I haven’t tested another flour. The coconut flour really helps absorb the oil so the cookies stay a good consistency

I made these last night and OMG, they’re SO darn good! Who knew something so simple could taste so good?! They are fudgey, like you said, and dense. Even my two little boys, who can be pretty picky, loved them. Best of all, they’re so freakin’ easy to make (yay for not having to bake them!), not to mention pretty much guilt-free since they’re healthy and don’t have added junk in them.
