These Cinnamon Sugar Snickerdoodle Blondies are the most delicious soft-baked buttery blondies coated with cinnamon sugar on top and they’re made with gluten-free and nut-free ingredients.
These snickerdoodle blondies will win you over the second you take your first bite. Perfectly sweet and buttery and topped with cinnamon sugar. They turn out so good every single time and the recipe is pretty much foolproof.
Oh and this recipe is ready in less than 30 minutes, it’s one of the easiest desserts you can make. And it is a crowd pleaser. Every time I make these my family and friends swoon over them and the batch is gone basically in a day. Between me, my husband and my kids though that’s usually the case with most desserts!
The ingredients in these snickerdoodle blondies are staples in the fridge/pantry. Especially if you are a frequent baker from my blog. I do use butter in these instead of a coconut oil but if you want to use a vegan butter ot make them dairy-free, you can too!
Tip: these are a great dessert recipe to make when you need a quick and easy dessert *fast*. They are ready in under 30 minutes!
What ingredients you need to make snickerdoodle blondies:
- Butter – the butter should be at room temperature and I usually use unsalted
- Coconut sugar – this is the main form of sugar/sweetener in these. I use this instead of refined sugars
- Egg – I haven’t tested flax egg here but I do think it would work well
- Vanilla extract – this adds extra flavor to the blondies! Don’t omit
- Gluten-free all purpose flour – if not gluten-free, you can use all purpose flour
- Cinnamon – lots and lots of cinnamon is needed for this recipe!
How to make snickerdoodle blondies:
- Preheat oven to 350 degrees F then line an 8×8 baking dish with parchment paper
- Cream together butter and coconut sugar until lightly fluffy
- Mix in the egg and vanilla until combined
- Add in the flour, baking powder and cinnamon until smooth
- Press the blondie batter into baking dish and spread across
- In a small bowl, mix together coconut sugar and cinnamon then sprinkle on top of the blondie batter
- Bake in oven for 20-22 minutes or until edges are golden
- Slice into 9-12 blondies and enjoy!
Tips for success:
- I use softened butter here! Make sure to let it get it room temperature before mixing in
- I always line a baking dish with parchment paper and grease so the blondies are easy to remove from baking sheet
- These snickerdoodle blondies can be stored at room temperature for 3-5 days but taste best for first 2-3 days. I also freeze them for up to 2 months
- If you’re not gluten-free, feel free to use all purpose flour instead

- 1/2 cup butter, softened
- 2/3 cup coconut sugar
- 1 egg
- 1 teaspoon vanilla extract
