Addicting Gluten-free Cinnamon Peanut Butter Granola with big CLUSTERS! This vegan granola recipe is absolutely delicious and so easy to make.
OK sooo I don’t think everyone knows this. But my favorite food ever is probably granola.
As in if I had to choose 1 food to snack on for the rest of my life, it would definitely be a big a$$ bag of granola. I love the crunchy kind with extra big clusters. And one that has a little salty and sweet kick to it. Which is why this new Cinnamon Peanut Butter Granola is hands down my favorite of the moment.
This recipe is inspired by one of my favorite store-bought granolas that is grain-free cinnamon peanut butter. But this recipe is grain-based with oats. It is so so easy to make your own granola at home. I buy a lot of granola every week too, but it is great to have go-to recipes up my sleeve for when I want to make one and snack on that.
You can store this granola in the fridge for about 2-3 weeks (if it lasts that long). And it has the most insane clusters ever. It bakes in 1 big piece and then you just break it up into smaller ones and enjoy!

What ingredients you need to make peanut butter cinnamon granola with clusters:
- Gluten-free rolled oats
- Unsweetened coconut shreds
- Crushed peanuts
- Flaxseed meal
- Chia seeds
- Cinnamon
- Coconut sugar
- Maple syrup
- Creamy peanut butter (code RACHL for free shipping!)
- Liquid coconut oil
- Vanilla extract
How to make healthy gluten-free granola at home:
- Preheat the oven to 350 degrees and line a large baking sheet with parchment paper
- In a large bowl, mix together the oats, coconut, peanuts, flaxseed meal, chia seeds and cinnamon
- In a small bowl, mix together the coconut sugar, maple syrup, peanut butter, coconut oil, hot water and vanilla extract
- Pour the wet ingredients onto the dry ingredients and mix well to evenly coat
- Add the granola to baking sheet and press down so the ingredients are in one layer, stuck together
- Bake in oven for 15 minutes then rotate tray and bake for another 15 minutes
- Allow the granola to cool for 15 minutes
- Break the large cluster into smaller pieces and enjoy!

- 3 cups gluten-free rolled oats
- 1/2 cup unsweetened coconut shreds
- 1/2 cup crushed peanuts
- 1/4 cup flaxseed meal

- 2 teaspoons cinnamon
- 1/3 cup coconut sugar
- 1/4 cup maple syrup

- 2 teaspoons vanilla extract

Notes
*Store granola in airtight container for a week or fridge for 2-3 weeks

okay this granola is insane! I made some last night and it’s so addicting and the clusters are huge! it makes a great snack bowl with some banana and vanilla almond milk 🙂

Have you tried leaving the coconut sugar out of the recipe to make it less sugary?

nope it needs it though to make it crunchy/for consistency reasons! if you omit it may just be a bit off

Does the recipe call for salted or unsalted peanuts?
Also can you sub almonds ?

if you subbed almonds it wouldn’t be a peanut butter granola but sure 😉 you can use either unsalted or salted ! xx

Loved this! I decided to make a few adjustments, using regular oats, honey instead of maple syrup, and left out the coconut sugar since I didn’t have any. Still turned out really well – thanks for the recipe!
