MAAAAAA I have a new meatloaf recipe for us and it is a really really good one.
Blue cheese stuffed meatloaf that is actually the most flavorful and tasty combination ever. Once you have this bad boy baking in the oven you will know you made the right decision. It smells absolutely amazing when you are cooking it. The buffalo sauce plus the blue cheese combo is too die for. This is the kind of meal that you can prep and have all week long or feed the family for a night.
I also love that this is freezer friendly so you can wrap it in foil and put it into a large ziplock and if it on hand for whenever!
It’s meaty, cheesy, filled with buffalo sauce flavor and my husband request this all the time. This recipe is so underrated in my opinion and can easily be a new go-to dinner recipe for you. I love that it is great to meal pre too because it makes a few servings and it stays good for 5 days in the fridge. Or 2 months in the freezer.

What ingredients are in this buffalo blue cheese meatloaf:
- Ground beef or ground chicken – really either can work for this recipe, which I love because they’re interchangeable based off preference or what you have on hand
- Egg – I haven’t used an egg replacement but if you do in meat recipes often, feel free to use
- Garlic – if you don’t have garlic cloves, use powder but I prefer garlic cloves
- Onion – I typically use a sweet white onion but use what you prefer
- Large carrot – carrots and buffalo are always a combo!
- Mild buffalo sauce – or use spicier if you want more of a kick in this recipe
- Almond flour – I haven’t tried another flour but gf flour or regular all purpose flour can work use use a bit less
- Blue cheese crumbles – if you don’t love goat cheese, use cheddar or another favorite
How to make gluten-free cheese stuffed meatloaf:
- Preheat oven to 375 degrees and line a baking sheet with parchment paper
- In a large bowl mix together beef, egg, onion, carrot, spices and buffalo sauce well
- Next mix in the almond flour to the mixture
- Add 1/2 the meat mixture onto the baking sheet and form a large rectangle using your hands (about 1 inch thick)
- Crumble 1/2 cup of the blue cheese in the center then cover with remaining meat and pinch the sides to create a large loaf
- In a small bowl, mix together 1/4 cup buffalo sauce and the 3 tablespoons blue cheese and brush on top of the loaf
- Bake in oven for 45 minutes then broil for 1 minute
- Allow the loaf to cool then slice and enjoy
FAQs and tips on making this buffalo chicken meatloaf:
- Do I need a springform pan? Nope! I usually use a sheet pan for make this. Or you can use a loaf pan if you want. Just look for the internal temperature to be 160 degrees to know if it is ready.
- Should I cook the veggies ahead of time? You can! Sometimes I sauté the onions and carrots before but it’s optional. If you don’t usually love raw veggies then cook them before.
- Allow the meatloaf to rest for 10 minutes before slicing. Otherwise it will follow apart (just like baking!).
- Is this meatloaf spicy? It can be. Use your go-to buffalo sauce so you can choice how spicy you want it.
- I don’t like buffalo sauce, any other ideas? For sure! Use BBQ sauce instead. It will be delicious.
- Can I freeze this meatloaf? 10000% Such a great recipe to keep in the freezer for up to 2 months.

Ingredients
- 1 lb ground beef or ground chicken (either works!)
- 1 egg
- 1/2 onion, chopped
- 1 garlic clove, minced
- 1/2 large carrot, chopped and peeled
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon onion powder
- Sea salt and black pepper to taste
- 1/4 cup + 1/4 cup mild buffalo sauce
- 1 cup almond flour
- 1/2 cup + 3 tablespoons blue cheese crumbles
Instructions
- Preheat oven to 375 degrees and line a baking sheet with parchment paper
