Grill Pan Steak Tacos with Chimichurri Sauce! These are the ultimate steak tacos and you don’t even need a grill to whip them up plus they’re paleo and gluten-free.

We have been using the grill pan for everything around here. Eggs, quesadilla, warming up leftover pizza, everything! But most recently we have been grilling up some STEAKS like a boss thanks to our grill pan.
Our homemade chimichurri sauce
I don’t think mcjordO has been so obsessed with a recipe before. He literally put this chimichurri on everything. And I have to give him full credit here as this was his idea and it was one of the most gorgeous things I have ever had come out of our kitchen. And don’t even get me started on the flavor! It is absolutely amazing.
What ingredients are in these grill pan steak tacos with chimichurri:
- Shallot, chopped
- Garlic cloves, minced
- Hot cherry pepper, chopped
- Sea salt and black pepper
- Champagne vinegar
- Olive oil
- Cilantro, chopped
- Parsley, chopped
- Ribeye steaks (or your favorite steak)
- Tortillas of choice (I used almond flour which is paleo but we also love corn tortillas for this!)
- Shredded pepper jack cheese (omit if paleo)
- Sautéed peppers and onions
How to prepare these grill pan tacos and chimichurri sauce:
- Add the chimichurri ingredients to a mason jar and mix well (or a jar/bowl of sorts) and set aside
- Put the steaks in a shallow bowl and pour half the chimichurri on top of them and let them marinate until you cook (this can be 5 minutes or even hours before in the fridge)
- Warm a grill pan or grill then once hot add the steaks and cook on high heat for 4 minutes then flip with tongs and cook for another 4 minutes on medium heat
- Remove steak from the grill pan and allow it to cool for a few then slice into desired pieces
- Assemble tacos in the tortillas with toppings, drizzle the rest of the chimichurri on top and enjoy!
Tips for your steak tacos
- We used ribeye steaks but flank or skirt steak would work well too!
- Marinate the steak for a bit before cooking while allowing the meat to get closer to room temperature
- Once the meat is cooked, let it sit for 5 to 10 minutes to let the flavors set
