5-minute Black Bean and Corn Salsa – This is a variation of a dish my mom always made growing up. It is the perfect start to any warm weather BBQ! I love it with tortilla chips or some corn chips like the ones in Trader Joe’s.
Strawberry Watermelon Lemonade Refresher – What more needs to be said! I love this mocktail and might be your new summer go-to drink. You can always add your desired liquor if that is what you’re looking for. Some have done vodka, tequila or rum!
Easy Memorial Day Weekend Side Dishes:
Deli-Style Macaroni Salad – This is hands down my husband’s favorite summer side dish. It feels like there isn’t a week that goes by during the summer he isn’t requesting this! It’s on our menu for Sunday’s BBQ at our place.
The Best Grilled Veggie Kabobs – The mix of savory veggies and the sweetness of the pineapple make these grilled veggie kabobs the perfect mix and so easy to make.
Smashed Potato Salad – This is my fun take on the classic potato salad. The crispy smashed potatoes make this a new way to enjoy a classic BBQ favorite.

Spatchcock Grilled Whole Chicken – Trust me, once you make chicken this way, you won’t want it any other way. And if I can do it – you can too I promise!
Lobster Cobb Salad – This was my re-creation of a Lobster Cobb Salad that is from Montauk, NY. And it does not disappoint!

Frozen S’mores – What better way to celebrate the start of summer than a s’more. These frozen s’mores are great because you can prep them ahead of time!
5-minute Vegan Banana Pudding – This childhood favorite of mine is so quick and easy to make and has something for everyone!

Fancy Plastic Glassware – I love these plastic glasses for the outdoor summer dinners. We bought these two summers ago and they are still in great shape!
BBQ Skewers – We’re big fans of making kabobs on the grill and these are the best skewers we have found.
Grilling Spatulas – My husband is very particular with his grilling tools and these are his favorite spatulas for the grill.
