Turkey burgers are basically a weekly staple over here. I love having them for lunch or dinner. You can add them to your favorite bun or bowl and even toss one into a salad!
These Ginger Scallion Turkey Burgers are actually from my cookbook and I love this Asian-inspired version that is full of flavor with ginger, scallions, garlic and a dreamy peanut sauce on top. They’re too good to be missed and I am obsessed with how easily they come together.
I have been making these burgers for years now and they are still one of my absolute favorites again and again. They’re made with just a few ingredients and they stay well in the fridge for a few days, making them great for meal prep too.
I feel like turkey burgers can sometimes get a bed reputation. Most think they are dry or boring and lack flavor. But not these. The mix-in’s with the turkey burgers really add a lot of flavor. And the sauce on top brings it out even more. Not to mention that if you cook these over some sesame oil, it adds even more flavor.

What ingredients are in these ginger scallion turkey burgers:
- Ground turkey – I love turkey for this recipe but you can also use ground chicken if you prefer
- Cooked quinoa – I love adding this in for a sneaky nutritious boost!
- Scallions – chopped and we use the green parts only
- Coconut aminos – if you don’t have coconut aminos then you can use soy sauce too or tamari
- Garlic cloves – I love to use fresh garlic cloves but you can also use garlic powder if you prefer
- Ground ginger OR fresh – I have used both in this
- Sesame oil – so underrated for this! Toasted sesame oil adds so much flavor
- Creamy peanut butter – creamy peanut butter, oh how I love you!
- Full-fat coconut milk – love adding this to make the sauce creamier and the subtle hint of coconut flavor
How to make ginger scallion turkey burgers:
- First prepare the burgers by mixing together turkey, quinoa, scallions, coconut aminos, garlic cloves and salt and pepper until combined
- Divide meat into 4 equal patties about 1-inch thick and set aside (I use meat handling gloves)
- Heat sesame oil in a large skillet over medium heat and add patties to skillet. Press your thumb in center of each one to form an indentation (it helps burgers hold their shape as they cook)
- Cook the burgers until they are browned on outside and completely cooked through. This is about 5 to 7 minutes on each side. Internal temperature should be 165 degrees F
- While the burgers cook, mix together peanut sauce and set aside
- Remove from heat and serve with peanut sauce, on your desired bun and with toppings

Ingredients
Turkey burgers:
- 1 lb ground turkey
- 1/2 cup cooked quinoa
- 2 tablespoons scallions, chopped (green parts only)
- 1 tablespoon coconut aminos
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, minced OR 1/2 teaspoon ground ginger
- Sea salt and black pepper to taste
- 2 teaspoons sesame oil
Peanut sauce:
- 1/4 cup creamy peanut butter
- 3 tablespoons full-fat coconut milk
- 1 teaspoon sesame oil
- 2 tablespoons coconut aminos
For serving:
- 4 gluten-free buns or lettuce wraps
- Avocado, lettuce, pickled red onions
