I feel like I have been doing us a disservice not loving on white chocolate chips in the last few years. I don’t know if my tastebuds have changed or what but I cannot get enough of them. And these blondies are my latest favorite recipe to make with them. They get all melted and perfectly gooey in the center of the blondies and with the blueberries for a little tartiness – it is too die for!

These blondies are also vegan, gluten-free and nut-free. Plus they’re ready in 25 minutes. And they are a complete game changer if you want to make a dessert recipe that will impress anyone and everyone. They are super easy to whip up and taste fancy af if you ask me.

Oh and if you love all things fudgey and undercooked like almost raw – these are seriously for you!

What ingredients you need to make these gluten-free blondies:

  • Vegan butter, melted (or use regular butter!)
  • Flax egg – Garden of Life Organic Ground Flaxseed + warm water. These ground flaxseeds are a game changer for all your baking and cooking and snacking needs. I use them for flax eggs for baking, sprinkle them on top of yogurt parfaits, add them into my granola recipes and Jordan also puts them in his smoothes. Garden of Life makes our favorite ground flax. It is the best quality and so easy to use in the kitchen.
  • Coconut sugar
  • Vanilla extract
  • Gluten-free oat flour
  • Baking powder
  • White chocolate chips
  • Organic blueberries

How to bake these blueberry blondies with white chocolate chips: 

  1. Preheat oven 350 degrees and line an 8×8 baking dish
  2. Cream together butter, flax egg, coconut sugar and vanilla extract until smooth
  3. Mix in the flour and baking powder until fully combined
  4. Fold in blueberries and white chocolate chips
  5. Add to baking dish and bake in oven for 25 minutes or until golden!
  6. Slice into pieces and enjoy!

  • 1/2 cup vegan butter, melted (or use regular butter!)
  • 1 cup coconut sugar (or use 1/2 brown sugar and 1/2 cup cane sugar)
  • 1 teaspoon vanilla extract
  • 1 1/2 cup gluten-free oat flour
  • 1 teaspoon baking powder
  • 1/2 cup white chocolate chips
  • 1/2 cup organic blueberries

Instructions
