I LOVE YOU SHEET PAN MEALS! You are a savior and such a game changer for dinner time. Especially when you are like me and hate getting the kitchen dirty (yet again). We toss a bunch of veggies and protein onto a sheet pan, season it and add some oil then bake it in the oven until it is done.
It makes life 100x easier and we can also all have a healthy dinner in no time. This is one of those types of meals that you can quickly add in the oven – get yourself or your kids all washed up from the day and by the time you are done, your dinner will be ready for ya. Plus you can also switch up the ingredients you use. Although I am quite into the potato, veggies and sausage vibes right now. The flavors and textures together are on point. And call me nuts – but ya girl LOVES having sausage leftover cold the next day too (if there are any leftovers that is…)

What’s in this healthy one sheet dinner:
- Sweet potatoes or 1 bag of small red potatoes, cut into quarters
- Onion, sliced
- Garlics cloves, minced
- Large carrots, peeled and cut into quarters
- Broccoli florets
- Sausage links, cut into quarters
- Olive oil or avocado oil
- Sea salt and black pepper to taste
How to make this easy sheet pan dinner:
- Preheat oven to 425 degrees and line a baking sheet with parchment paper
- Add the veggies to baking sheet and coat with oil and salt and pepper
- Cook in oven for 25 minutes, mix around/shake the pan then add in sausage pieces and cook in oven for 20 minutes or so until cooked for your liking
- Enjoy while warm!

Ingredients
- 2 sweet potatoes or 1 bag of small red potatoes, cut into quarters
- 1 onion, sliced
- 2 garlics cloves, minced
- 3 large carrots, peeled and cut into quarters
- 3 cups broccoli florets
- 4 sausage links, cut into quarters
- 1 tablespoon olive oil or avocado oil
- Sea salt and black pepper to taste
