These Strawberry Cheesecake Overnight Oats are the ultimate healthy breakfast to prep. It’s such a delicious breakfast idea that is also gluten free-friendly, vegan-friendly and takes 5 minutes to prep.

If you know me well, you know I started my website making all overnight oats recipe. I love them and they were one of the first recipes I ever made. I love how versatile they are. They’re so easy to prep, filled with nutrients and I can take them on the go with me.

And now to think that I feed overnight oats to my kids too, it’s so wild. Cooper, our 1 year old, especially loves overnight oats. Every time he sees me open my jar to eat, he starts going nuts!

These strawberry cheesecake overnights are the latest family obsession. They give us full strawberry cheesecake vibes. They are just the right amount of sweet, creamy, rich and they are a healthy breakfast to prep for you and your family. Not to mention it won’t take more than 10 minutes start to finish to put these together.

You can prep these any day of the week and have in the fridge for easy access.  I like to make them on a Sunday night and have for breakfast all week long. It makes me feel like I am having dessert for breakfast, which is speaking my love language.

I can’t wait to hear what you think of this recipe. Let me know if you try them!

What ingredients you need to make these overnight oats:

  • Gluten-free rolled oats – if not gluten-free, use regular oats if you prefer too. Quick oats would change consistency in this recipe
  • Chia seeds – I love adding this in for texture and for extra nutrients
  • Frozen or fresh strawberries – stems removed! I use fresh or frozen strawberries here. Either can work. You could also even use freeze-dried strawberries if you want
  • Non-dairy milk – almond, coconut, anything can work
  • Yogurt of choice – you can use dairy-free if needed or use greek yogurt
  • Maple syrup – or omit if preferred or making for infants. You can also use honey too
  • Topping ideas: graham crackers, chia jam, fresh strawberries

How to make Strawberry Cheesecake Overnight Oats:

  1. Add strawberries, milk, yogurt, maple syrup and vanilla extract to blender and blend together until everything is pureed
  2. Evenly distribute the oats and chia seeds to mason jars or tupperware of choice then the same for the “strawberry milk”
  3. Cover and add to fridge for at least 2 hours or overnight until ready to eat. I like to prep these the night before and they stay good for 5 days in fridge so it’s great to prep in advanced
  4. When you are ready to eat, add any desired toppings you’d like and enjoy!

FAQs and tips on making overnight oats:

  • Let the oats sit in fridge overnight! They will thicken a bit. They need at least 2 hours or so but I like overnight. Plus who preps breakfast 2 hours before eating?!
  • I don’t like strawberries, what are my other options? You can use any other berries you want. Raspberries, blueberries and blackberries can all work in this recipe.
  • My oats are too liquidy, what happened? If they are too thin and have set over night, add in some more oats and mix to thicken.
  • What toppings do you recommend? Graham crackers, chia jam, fresh strawberries.
  • Add more milk before eating if your oats are too thick for your taste.
  • Can I warm these up? You can! I usually don’t. If you don’t want them totally cold, just take out from fridge and bring to room temperature. With the yogurt involved, I prefer cool/cold.
