Welcome to BREAKFAST WEEK everybody!!!!! Day 2 (yesterday we made Classic Overnight Oats and today we are making another classic breakfast recipe – CHIA SEED PUDDING. Truly an OG over here and one we make and eat a handful of times a month. It is one of those recipes that is super versatile and so incredibly easy to make.

It also kind of feels sinful that I waited so long to post my classic chia pudding recipe until now. But if you have my cookbook, you know I shared it in there a couple years ago. And you know my obsession with it as well.

But let’s dive into WHY I love chia seed pudding so much…

  1. It is one of those things that you really can’t get sick of easily because you can spice things up in so many ways. If you are over almond milk, use coconut or flax milk or anything. If you want you can you can add in different fruits like blueberries, bananas, peaches, strawberries, anything! You can use any protein powders or collagen powders, top it off with some granolas, coconut flakes, nut butters. You get the point.
  2. It is SO easy to make. Almost too easy. You will notice I like to put mine in the blender. I know this isn’t a must, but it doesn’t make it extra creamy so if you are hesitant on the texture or consistency of chia pudding, it’s a game changer.
  3. You can prep a big batch early in the week and have it all week long. Feel free to quadruple the recipe if you want. And I leave it plain usually and add toppings right before
