There is something so satisfying about meal prepping. Most assume salads can’t be prepped because they get soggy. But if you meal prep in a jar, it’s an entirely different ball game. 

We prep these Greek Chicken Salads in a jar all the time. Add some veggies and things to the jar and a simple dressing on the bottom. Store them in the fridge and you have lunch ready for the next day or day after.

The key to getting the mason jar salad to stay fresh is layering the ingredients in a way that they don’t get soggy. Dressing always goes at the bottom then I like to add crunchier veggies/mix-in’s on the bottom, followed by protein and the greens at the top. Anything you want to stay crunchy should go on the bottom.

For example, I add the olives or feta cheese to the bottom here usually since I don’t mind if they marinate in the dressing on the bottom.

What ingredients you need to prep Greek Chicken Salads in a jar:

  • Kalamata olives – or use green olives or any other variety you prefer.
  • Feta cheese – I usually use sheep or goat’s milk feta cheese.
  • Cherry tomatoes – if you are like me and don’t like tomatoes, omit! But my husband prefers them when I make these for him too.
  • Pepperocinis – the go-to for a little burst of spice and flavor.
  • Cucumbers – I usually do mini seedless cucumbers for us.
  • Cooked pasta if desired – optional but I like adding this to make it more filling too.
  • Leafy greens – I typically like arugula for greek salads or romaine lettuce.

How to prep Greek Salad in a jar:

  1. Make the mason jar salads by adding the ingredients to a 32 ounce mason jar (or something similar in size) in the following order: dressing, olives, tomatoes, pepperonis, cucumbers, feta cheese, chicken, pasta and arugula
  2. Add lid on top and store in fridge for 3-4 days until ready to eat
  3. To serve, pour contents into a large bowl or plate, mix and enjoy!

FAQs on prepping Greek Chicken Salads in a jar:

  1. Can I make this salad vegetarian? Yes! Omit the chicken and add chickpeas some some cooked tofu is a great option.
  2. Can I add other ingredients? Of course. I don’t recommend using avocado since it’ll brown. But any other veggies or things you have that you want to use up like roasted red peppers or bell peppers, onions, etc. all work in this.
  3. Is it okay to use store-bought dressing? Of course! Use any dressing you want here. I love using a simple vinaigrette with some olive oil and spices.
  4. How long do mason jar salads last in the fridge? 3-4 days is a sweet spot. No more than this or the ingredients will start to spoil a bit.
  5. How do I serve a mason jar salad? Pour the contents of the jar into a large mixing bowl or a plate and mix together and serve!
