One-Skillet Cauliflower Gnocchi with Sausage + Spinach for an easy and healthy dinner that only takes 10 minutes to whip up! 

Ummm hi! Yes – this is an easy and flipping delicious dinner that will be ready in just 10 minutes. What can be better?

Oh wait.. I do have something even better! Did I mention you only dirty one skillet to make it? One big skillet is all you need to make this cauliflower gnocchi dish. And to be honest, if something has more than a couple dirty pots or pans involved – it just isn’t happening over here.

This was inspired by one of those “use what you have kind of meals”. I had a frozen bag of the Trader Joe’s Cauliflower Gnocchi, some chicken sausage, leftover spinach in the fridge and I always have some type of jarred tomato sauce on hand. Or in this case you can even use a pesto or vodka sauce too. Anything works! And if you prefer a plant-based/vegetarian meal, you can easily omit the sausage or sub a vegan alternate instead.

I hope you guys love this recipe as much as our family does over here. It is the ultimate dish to make when you need dinner in a few and already made eggs or something simple the night before.

What ingredients you need to make this Cauliflower Gnocchi Skillet:

  • Avocado oil or olive oil
  • Sausage links, cut into quarters (I used frozen chicken sausage – you can use a plant-based one too or omit if you prefer)
  • Trader Joe’s Cauliflower Gnocchi
  • Sauce of choice (marinara, pesto or even vodka sauce is great!)
  • Baby spinach
  • Fresh parmesan cheese on top

How to make this easy weeknight dinner in 10 minutes:

  1. Heat a large skillet with oil and add the sausage on top and cook for a couple minutes on medium heat, flipping over to cook on both sides
  2. Coat a little more oil on the pan and add in the gnocchi and cook with sausage for about 3 minutes then flip over and cook for another 3-5 minutes
  3. Lower heat and pour sauce in the pan and mix well (feel free to add more sauce if needed)
  4. Add in the spinach and mix and cook for 1-2 minutes or until wilted
  5. Add fresh parm on top and serve while warm!
