S’mores on a stick are such a fun twist on the traditional s’mores! Adults and kids both love these and they are incredibly easy to make. One of my favorites to serve for BBQS too and since they’re served on popsicle sticks, it is really easy to serve them.
The layers of crunchy graham crackers with melted marshmallows and chocolate in the center is the best combo. I love how ooey gooey they are and the crackers drizzled with chocolate on top too is absolutely delicious.
These are a great dessert or sweet snack to bring and serve at any backyard event or gathering. They’re great for birthday parties, showers, anything. And who doesn’t like s’mores?! Sure, the classic roasted marshmallow is delicious but this is a fun spin on the traditional s’mores dessert.
They taste incredible for up to a few days and you can enjoy these s’mores sticks all year around!
What ingredients you need to make s’mores on a stick:
- Full-fat coconut milk – typically this kind of recipe would call for condensed milk. But I use coconut milk as a dairy-free alternative
- Mini marshmallows – not large ones! The mini ones works best for this recipe
- Dark chocolate chips – or use milk chocolate or semi-sweet if you prefer
- Gluten-free graham crackers – if not gluten-free, use any graham crackers you want!
- Optional: sprinkles
How to make s’mores on a stick:
- In a microwave-safe bowl, microwave the milk on high for 1-1/2 minutes
- Add in the marshmallows and 1 cup of the chocolate chips and stir until smooth
- Drop by the tablespoon onto half of the graham crackers
- Add popsicle sticks on top of the chocolate marshmallow mixture and press down
- Then top with remaining half of graham crackers and allow them to set for at least 2 hours
- While they are setting, melt remaining chocolate and drizzle on top and add sprinkles if desired
FAQs on making s’mores sticks:
- Can I make these ahead of time? Absolutely! They actually need to set for 2 hours or so. And they stay good for up to 5 days. So they’re great to make and then bring to a get together or serve!
- Can I use large marshmallows for these? No, I recommend mini ones as they melt better into the milk and chocolate mixture.
- Can I use milk chocolate or only dark chocolate? Either works! Even semi-sweet chocolate or white chocolate are great options.

- 1 cup mini marshmallows (not large)
- 1–1/3 cup dark chocolate chips
- 24 gluten-free graham crackers
- Optional: sprinkles
Instructions
