Give me all the tater tots and chicken nugget and hash browns and things while growing up – PLEASE!

But where were these zucchini tots for a healthier version?! I am obsessed with this recipe and Ezra just gobbles them up. He helps me make them too (aka he snacks on carrots the whole time) and he calls it “cook with mama” it is the cutest thing ever.

I love that this is an easy snack or side dish to make for really any age but particularly for kids. They are cute and bite-sized and sneak in some zucchini and carrots into their diet without it being a process if your kid is picky. Or let’s be honest – if you are picky. Because I am 100x more particular when it comes to food than Ez I feel like ha!

The Best Healthy Gluten-free Zucchini Tots made with 6 key ingredients - these oven-baked veggie tots are a family favorite over here and so easy to make.

What ingredients you need to make these healthy veggie tots:

  • Zucchini, shredded
  • Carrots, peeled and shredded
  • Gluten-free flour or oat flour – I haven’t tested subs
  • Coconut flour – I haven’t tested subs
  • Eggs – I haven’t tested flax egg
  • 1/4 cup shredded cheese – cheddar or mozzarella I usually use. You can likely use a dairy-free cheese too
  • Dried basil
  • Dried oregano
  • Garlic powder
  • Onion powder
  • Sea salt and freshly ground black pepper

How to make oven-baked gluten-free zucchini tots:

  1. Preheat oven to 400 degrees F. Lightly oil a baking sheet with oil of choice
  2. Place grated zucchini in a colander over the sink. Add salt and gently toss to combine; let sit for 10 minutes. Using a clean dish towel or paper towel or cheese cloth, drain zucchini completely, removing as much water as possible
  3. Transfer zucchini to a large bowl then stir in carrots, flours, eggs, cheese and spices and mix until evenly combined
  4. Form zucchini into tots and place onto the prepared baking sheet
  5. Place into oven and bake for 10 minutes then flip gently and bake for another 10 minutes or so
  6. Serve while warm with desired condiments like ketchup or mustard

Notes

*Store leftovers in fridge for 5 days or freezer for 2 months

**I usually reheat in oven or microwave. Ezra also eats them cold!
