Pumpkin week day THREE baby!!!!! And these vegan + paleo PUMPKIN mousse parfaits are actually pure insanity fam.

If you are obsessed with all things pumpkin pie, you are in for a real delight guys. This is one of those recipes you are going to want to make over and over again. Plus it is so easy to make and comes together in less than 5 minutes, which is just insane. And makes it even more addicting than it already is.

What I love about this recipe besides the speediness of it, is how versatile it is. You can have it for breakfast, snack, dessert, anything! Plus my two year old is obsessed with it. We add some coconut whip on top, creamy peanut butter and granola for an epic crunch. And WOW it is a flipping dream. Plus I love how it is lower in sugar compared to most pumpkin mousses and it is vegan and paleo.

What ingredients are in this vegan + paleo pumpkin mousse:

  • Coconut yogurt (something thick and creamy works best)
  • Pumpkin puree
  • Maple syrup
  • Cinnamon
  • Vanilla extract
  • Topping ideas: coconut whip, granola, nut butter

How to make easy pumpkin mousse:

  1. In a large bowl mix together ingredients until smooth (you can also add this to a blender!)
  2. Once creamy, add to tupperware and put in fridge for a bit (or eat right away) and serve slightly cool with desired toppings
