Sharing the most summery summertime salad – Watermelon Peach Salad with cucumbers, feta cheese, walnuts and basil and dressed with fresh lime juice and extra virgin olive oil.

I have a feeling that when I say “summertime salad”, you say “watermelon feta, please!!”.

This combination is always a crowd pleaser and one of the best flavor combos to serve at your summertime BBQs or get togethers. It makes a few servings and can pair with any meats and veggies you are grilling up too. I love the addition of the peaches too. It adds the best flavor and who doesn’t love peaches in the peak of summertime?!

Jordan is a huge fan of this combo and my friend Erica who we are staying with, is a major savory food craver. Now you guys know I am all about the sweet desserts and crave sweet over savory 99% of the time. But I also love making recipes that you guys and others are craving and request me to make. Just like this watermelon salad.

Now when it comes to the watermelon – you can either cheat and buy watermelon already sliced to save time. Or you can buy a whole one and recruit Jordan to cut it up like I do. He loves slicing fruits like this for some reason. Probably because it is one of those times he can make a mess in the kitchen and I can’t say anything since I don’t like slicing watermelon – HA!

How to know if a watermelon is ripe and ready to eat:

  • First things first – you can’t sniff a watermelon like other fruits
  • Look for a ground spot of sorts. When the watermelon is ripe, you’ll see a white or yellow-ish patch on its side.
  • Jordan also usually just picks the heaviest one (he thinks he gets the most melon then!)
  • Make sure the watermelon is soft/smooth. No cuts and mushy or soft spots.
  • Tap the watermelon a bit. One that is ripe will have a hallow sound from all of the juice and it is at peak ripeness!

What ingredients you need to make this summery salad:

  • Watermelon – you can buy a whole watermelon and cut it or buy pre-cut to save time
  • Peaches – if you’re not a peach fan, try nectarines! Or omit and add some more watermelon or even strawberries are yummy here
  • Feta cheese – you can also use a non-dairy/vegan cheese if needed!
  • Cucumber – I look for mini seedless cucumbers
  • Lime – fresh lime juice is best
  • Fresh basil – I don’t recommend dried basil here
  • Walnuts – if you can’t do walnuts, pistachios are a great alternative
  • Extra virgin olive oil – top quality olive oil is important for flavor
  • Flakey sea salt – obsessed with adding this to our meals

Ingredients

  • 67 cups watermelon, cut into cubes
  • 3 mini seedless cucumbers, sliced
  • 1 ripe peach, cubed
  • 3 ounces feta cheese (or sub a vegan cheese if needed)
  • 2 tablespoons fresh basil
  • 1/3 cup crushed walnuts
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • Flakey sea salt to taste

Instructions

  1. In a large bowl, add the watermelon, cucumber, peaches, feta, basil and walnuts
  2. Dress with lime juice, olive oil and sea salt
  3. Serve while cool and if making in advance, store in the fridge until serving but I recommend preparing right before eating for optimal texture and flavor
